Vinaigrette with Mackerel\Vinaigrette mit Makrele

Today we'll cook a nearly classic vinaigrette with boiled beets and potatoes, pickles, and green peas. We'll even dress the salad with a classic French vinaigrette dressing. It's from this vinegary dressing that the vinaigrette salad gets its name. I'll also add some pieces of boiled mackerel; it'll be delicious, although salted herring is more often used. Let's go, it's vinaigrette time!

Ingredients:
● Beets - 2 pcs
● Sun-dried mackerel - 1 pc
● Potatoes - 6 pcs
● Pickled cucumbers - 4 pcs
● Canned green peas - 1 can (400 g)
● Olive oil - 6 tbsp
● Wine vinegar - 2 tbsp.
● Unrefined sunflower oil - 2 tbsp. (optional)
● Mustard - 1 tsp., to taste
● Salt - a pinch
● Sugar - 1 tbsp.
● Ground black pepper, bay leaf, and herbs - to taste
1.Defrost the mackerel, remove the head, tail, and intestines. Cut the fish in half (this will make it fit better in the pan) and cook the mackerel in salted water with the bay leaf. The mackerel will be ready in 20 minutes; it won't need any longer. Drain the water (or use it in fish soup), cut the fish into pieces, leaving the fillets and removing the bones and skin. This may take some effort, as mackerel contains many small bones. Boil the potatoes and beets in salted water until tender. I microwaved the beets and potatoes at 800 watts for 20 minutes. Place the washed potatoes and beets in a bowl, add a glass of water, and the root vegetables will cook perfectly in the microwave. I liked it. Let the vegetables cool and peel them. Dice the potatoes and beets. Dice the pickles. First, I placed the beets in a salad bowl (sorry, it's fashionable to use the word "Gastromter" these days) and added 2 tablespoons of unrefined sunflower oil. Stir the oil and beets together to prevent the beets from discoloring. Then add the cucumbers.

2.Now it's time to make the vinaigrette. In a jar, combine olive oil and wine vinegar, add mustard, salt, and pepper. Sugar isn't included in the recipe, but I add a spoonful for a better flavor balance; wine vinegar is very acidic. Now close the lid of the jar and shake the dressing; it will become cloudy.

3.Dice the potatoes and add to the vinaigrette. My starchy potatoes completely fell apart. Okay, we'll gobble them up! Pour in the dressing.

4.Open the can of green peas and drain the liquid. Add the peas to the pan.

5.Add the mackerel pieces. Mix the vinaigrette with the mackerel and let it sit. Taste the vinaigrette and add salt and pepper if needed.

6.Serve the mackerel vinaigrette, garnishing it with cilantro or other herbs. It's delicious!

Heute bereiten wir eine fast schon klassische Vinaigrette mit gekochten Rote Bete und Kartoffeln, Essiggurken und Erbsen zu. Wir verfeinern den Salat sogar mit einem klassischen französischen Vinaigrette-Dressing. Von diesem Essigdressing hat der Vinaigrette-Salat seinen Namen. Ich gebe auch ein paar Stücke gekochte Makrele dazu; das schmeckt köstlich, obwohl gesalzener Hering häufiger verwendet wird. Los geht's, es ist Vinaigrette-Zeit!
Zutaten:
● Rote Bete – 2 Stück
● Getrocknete Makrele – 1 Stück
● Kartoffeln – 6 Stück
● Essiggurken – 4 Stück
● Erbsen aus der Dose – 1 Dose (400 g)
● Olivenöl – 6 EL
● Weinessig – 2 EL
● Unraffiniertes Sonnenblumenöl – 2 EL (optional)
● Senf – 1 TL, nach Geschmack
● Salz – eine Prise
● Zucker – 1 EL
● Gemahlener schwarzer Pfeffer, Lorbeerblatt und Kräuter – nach Geschmack
1.Die Makrele auftauen, Kopf, Schwanz und Innereien entfernen. Den Fisch halbieren (so passt er besser in die Pfanne) und in Salzwasser mit dem Lorbeerblatt kochen. Die Makrele ist in 20 Minuten gar; länger braucht sie nicht. Das Wasser abgießen (oder für Fischsuppe verwenden), den Fisch in Stücke schneiden, die Filets dabei lassen und Gräten und Haut entfernen. Das kann etwas Mühe kosten, da Makrele viele kleine Gräten enthält. Kartoffeln und Rote Bete in Salzwasser weichkochen. Ich habe die Rote Bete und Kartoffeln 20 Minuten bei 800 Watt in der Mikrowelle gegart. Die gewaschenen Kartoffeln und Rote Bete in eine Schüssel geben, ein Glas Wasser hinzufügen und das Wurzelgemüse in der Mikrowelle garen. Mir hat es geschmeckt. Das Gemüse abkühlen lassen und schälen. Kartoffeln und Rote Bete würfeln. Die Gurken ebenfalls würfeln. Zuerst habe ich die Rote Bete in eine Salatschüssel (Entschuldigung, heutzutage ist es so modern, „Gastromter“ zu sagen) gegeben und 2 Esslöffel unraffiniertes Sonnenblumenöl hinzugefügt. Öl und Rote Bete gut vermengen, damit sie sich nicht verfärben. Dann die Gurken dazugeben.
2.Jetzt ist es Zeit für die Vinaigrette. Olivenöl und Weinessig in ein Glas geben, Senf, Salz und Pfeffer hinzufügen. Zucker ist im Rezept nicht vorgesehen, aber ich gebe einen Löffel für einen besseren Geschmack hinzu; Weinessig ist sehr sauer. Das Glas verschließen und das Dressing schütteln; es wird trüb.
3.Die Kartoffeln würfeln und zur Vinaigrette geben. Meine mehligkochenden Kartoffeln sind dabei komplett zerfallen. Okay, dann lassen wir sie uns schmecken! Gieß das Dressing darüber.
4.Öffne die Dose Erbsen und gieße die Flüssigkeit ab. Gib die Erbsen in die Pfanne.
5.Gib die Makrelenstücke hinzu. Vermische die Vinaigrette mit der Makrele und lass sie kurz ziehen. Schmecke die Vinaigrette ab und würze sie gegebenenfalls mit Salz und Pfeffer.
6.Serviere die Makrelen-Vinaigrette und garniere sie mit Koriander oder anderen Kräutern. Köstlich!
