Meat with Persimmon and Cinnamon\Fleisch mit Kaki und Zimt

Today, we’re сooking another dish featuring persimmon. For the meat, I’ve chosen a leg fillet—a versatile cut suitable for any occasion. The dish is cooked in a skillet, with garlic and cinnamon serving as the perfect accompaniments to the meat and persimmon. Persimmon is delicious in hot dishes, too! Why not give it a try? Ingredients:
● Persimmons – 2 pcs
● Cinnamon – 1 stick
● Leg fillet (pork or beef) – 500 g
● Garlic – 4 cloves
● Orange – 1 pc (optional)
● Hot pepper – a pinch
● Starch – 1 tbsp
● Soy sauce – 5 tbsp
● Water or chicken broth – 1 cup
● Ground cumin – 1 tbsp
● Vegetable oil (for frying), black pepper, sugar, salt, fresh herbs, spices – to taste
1.Cut the leg fillet into pieces. Fry the meat in vegetable oil, cooking for about 4 minutes on each side. Remove the meat from the skillet and set it aside on a plate. Next, wash the persimmons and cut them into pieces roughly the same size as the meat, removing the seeds and calyxes. Sauté the persimmon pieces in the skillet and add the cinnamon stick. Don't overcook them; just sear them lightly for 3–4 minutes. If you want to add orange, now is the time! However, make sure to trim off and discard half of the zest to avoid a bitter taste. Return the meat to the pan and add the garlic pieces. Stir gently.

2.In a bowl, combine a cup of boiling water or chicken broth (the latter is much tastier!), a pinch of turmeric, a pinch of coriander, soy sauce, cumin, a pinch of sugar, hot pepper, and a pinch of salt. You can also add a tablespoon of starch or flour. Pour the mixture into the skillet and stir the dish gently. Now, reduce the heat and cover the skillet with a lid. Cook over low heat for approximately 20–25 minutes.

3.Transfer the meat and persimmon to plates. Garnish the dish with sesame seeds, cilantro, or parsley. You can also add crushed walnuts. It turned out quite well! An aromatic dish with a zesty hint of cinnamon! Persimmons are good for more than just snacking! And if the persimmons you bought have that astringent, mouth-puckering taste, you can use them to make persimmon kimchi instead.

Heute bereiten wir ein weiteres Kaki-Gericht zu. Ich habe Schinkenfilet verwendet, ein vielseitiges Stück Fleisch für alle Gelegenheiten. Das Gericht wird in der Pfanne zubereitet, und Knoblauch und Zimt harmonieren perfekt mit dem Fleisch und der Kaki. Kaki schmeckt auch hervorragend in warmen Gerichten! Warum nicht? Los geht's, es wird köstlich!
Zutaten:
● 2 Kakis
● 1 Zimtstange
● 500 g Schinkenfilet
● 4 Knoblauchzehen
● 1 Orange (optional)
● Eine Prise Chilischote
● 1 EL Stärke
● 5 EL Sojasauce
● 1 Tasse Wasser oder Hühnerbrühe
● 1 EL gemahlener Kreuzkümmel
● Pflanzenöl zum Braten, schwarzer Pfeffer, Zucker, Salz, Kräuter und Gewürze nach Geschmack
1.Das Schinkenfilet in Stücke schneiden. Das Fleisch in Pflanzenöl von jeder Seite ca. 4 Minuten braten. Das Fleisch aus der Pfanne nehmen und auf einen Teller legen. Die Kakis waschen und in etwa gleich große Stücke wie das Fleisch schneiden. Kerne und Kelchblätter entfernen. Die Kakistücke in einer Pfanne mit einer Zimtstange anbraten. Nicht zu lange braten, nur 3–4 Minuten. Wer mag, kann jetzt Orangen dazugeben! Die Hälfte der Schale abreiben und wegwerfen, sonst schmeckt es bitter. Das Fleisch zurück in die Pfanne geben und die Knoblauchstücke hinzufügen. Vorsichtig umrühren.
2.In einer Schüssel eine Tasse kochendes Wasser oder Hühnerbrühe (das schmeckt viel besser!), eine Prise Kurkuma, eine Prise Koriander, Sojasauce, Kreuzkümmel, eine Prise Zucker, Chiliflocken und eine Prise Salz verrühren. Optional einen Esslöffel Stärke oder Mehl hinzufügen. Die Mischung in die Pfanne geben und vorsichtig umrühren. Die Hitze reduzieren und die Pfanne abdecken. Bei schwacher Hitze ca. 20–25 Minuten köcheln lassen.
3.Fleisch und Kakis auf Tellern anrichten. Mit Sesam, Koriander oder Petersilie garnieren. Gehackte Walnüsse passen auch gut dazu. Es ist wirklich lecker geworden! Ein duftendes Gericht mit einem pikanten Zimtaroma! Kakis sind übrigens auch für etwas anderes gut! Falls deine gekauften Kakis einen herben Geschmack haben, kannst du Kaki-Kimchi zubereiten.
