Meat with Kiwi and Potatoes\Fleisch mit Kiwi und Kartoffeln

Today we'll be cooking something a bit unusual. It'll be pan-fried meat with steamed potatoes. What's so unusual about it? It's because we're using kiwi to tenderize the meat. Kiwi is great for quickly marinating shashlik, as the enzymes in kiwi help break down the meat fibers quickly, making it more tender. We'll make shashlik or barbecue with kiwi another time, but for now, we'll simply marinate the meat with kiwi and fry it in a pan. The kiwi marinade will also be used as a sauce for the meat. Let's go, it'll be delicious!

Ingredients:
● Boneless ham - 600 g
● Potatoes - 8 pcs
● Apples - 2 pcs
● Onions - 1 pc
● Water - 2 cups
● Starch - 2 tbsp
● Hot pepper - a pinch
● Greens, green onions, butter, garlic, frying oil, salt, sesame seeds, sugar, spices, black pepper - to taste
For the marinade:
● Kiwi - 1 pc
● Soy sauce - 5 tbsp
● Vegetable oil - 4 tbsp
● Apple cider vinegar - 2 tbsp
● Sugar - 2 tbsp
● Sesame seeds - 1 tsp (optional)

1.Peel the kiwi and grate the flesh. Use about 1 kiwi per 1 kg of meat. Add soy sauce, vegetable oil, apple cider vinegar, sugar, and sesame seeds to the kiwi. Mix the marinade mixture.

2.Cut the ham into pieces and place them in a bag, adding the kiwi marinade. Mix the contents, seal the bag, and let it sit for 30 minutes. You can turn the bag over a couple of times to stir the contents through the bag.

3.Remove the ham pieces and pat them dry (which is exactly what I didn't do!). Now fry the meat with onions in a frying pan. This takes about 20 minutes.

4.Mix the kiwi marinade with a glass of water, starch, a pinch of hot and black pepper, and a pinch of sugar. You can add a couple of cloves of chopped garlic. Mix everything together and add to the meat. Cook over medium heat for 10 minutes, then add fresh apple chunks without peels or seeds. Cover the pan and cook over low heat for another 10 minutes. Meanwhile, let's make the garnish.

5.Cut the potatoes into large chunks. Sometimes I add carrot chunks as well. Pour a glass of water and bring to a boil. Add the potato chunks. Add dried dill and a pinch of salt. You can add a knob of butter and a couple of cloves of garlic for flavor. Cook the potatoes, covered, over medium heat until the water comes to a simmer. Essentially, the potatoes are steamed; they'll be tender and cooked through in 20-25 minutes. Check for doneness with a fork.

7.Arrange the potatoes and meat in the kiwi sauce on a platter, garnish with cilantro and sesame seeds. I also added a daikon salad. The meat is soft and tender, and the potatoes are delicious. What else do you need to be happy?

Heute bereiten wir etwas Ungewöhnliches zu: Gebratenes Fleisch mit gedämpften Kartoffeln. Was ist daran so besonders? Wir verwenden Kiwi, um das Fleisch zarter zu machen. Kiwi eignet sich hervorragend zum schnellen Marinieren von Schaschlik, da die Enzyme in der Kiwi die Fleischfasern schnell aufspalten und das Fleisch dadurch zarter machen. Schaschlik oder Barbecue mit Kiwi machen wir ein anderes Mal, aber heute marinieren wir das Fleisch einfach mit Kiwi und braten es in der Pfanne. Die Kiwi-Marinade dient gleichzeitig als Sauce. Los geht's, es wird köstlich!

Zutaten:

● Knochenloser Schinken – 600 g
● Kartoffeln – 8 Stück
● Äpfel – 2 Stück
● Zwiebeln – 1 Stück
● Wasser – 2 Tassen
● Stärke – 2 EL
● Chili – eine Prise
● Grünes Gemüse, Frühlingszwiebeln, Butter, Knoblauch, Bratöl, Salz, Sesamsamen, Zucker, Gewürze, schwarzer Pfeffer – nach Geschmack
Für die Marinade:

● Kiwi – 1 Stück
● Sojasauce – 5 EL
● Pflanzenöl – 4 EL
● Apfelessig – 2 EL
● Zucker – 2 EL
● Sesamsamen – 1 TL (optional)

1.Die Kiwi schälen und das Fruchtfleisch raspeln. Pro kg Fleisch etwa 1 Kiwi verwenden. 1. Sojasauce, Pflanzenöl, Apfelessig, Zucker und Sesamsamen zur Kiwi geben. Die Marinade gut verrühren.

2.Den Schinken in Stücke schneiden und zusammen mit der Kiwi-Marinade in einen Gefrierbeutel geben. Alles gut vermischen, den Beutel verschließen und 30 Minuten marinieren lassen. Den Beutel zwischendurch mehrmals wenden, um die Marinade durchzurühren.

3.Die Schinkenstücke herausnehmen und trocken tupfen (genau das habe ich nicht getan!). Das Fleisch nun mit Zwiebeln in einer Pfanne anbraten. Das dauert etwa 20 Minuten.

4.Die Kiwi-Marinade mit einem Glas Wasser, Stärke, einer Prise Chili- und schwarzem Pfeffer sowie einer Prise Zucker verrühren. Optional ein paar gehackte Knoblauchzehen hinzufügen. Alles gut vermischen und zum Fleisch geben. Bei mittlerer Hitze 10 Minuten köcheln lassen, dann frische Apfelstücke ohne Schale und Kerne hinzufügen. Die Pfanne abdecken und weitere 10 Minuten bei schwacher Hitze garen. In der Zwischenzeit bereiten wir die Garnitur zu.

5.Die Kartoffeln in große Stücke schneiden. Manchmal gebe ich auch Karottenstücke dazu. Ein Glas Wasser zum Kochen bringen. Die Kartoffelstücke hinzufügen. Getrockneten Dill und eine Prise Salz dazugeben. Für mehr Geschmack können Sie ein Stück Butter und ein paar Knoblauchzehen hinzufügen. Die Kartoffeln zugedeckt bei mittlerer Hitze köcheln lassen, bis das Wasser nur noch leicht köchelt. Die Kartoffeln werden im Prinzip gedämpft; sie sind in 20–25 Minuten gar und weich. Mit einer Gabel prüfen, ob sie gar sind.

6.Die Sauce ist eingedickt und servierfertig!

7.Die Kartoffeln und das Fleisch in der Kiwisauce auf einer Platte anrichten und mit Koriander und Sesamkörnern garnieren. Ich habe außerdem einen Rettichsalat dazu serviert. Das Fleisch ist zart und die Kartoffeln sind köstlich. Was braucht man mehr zum Glücklichsein?

I'm not a big fan of mixing salty and sweet things, and also adding fruits to vegetables, or in anything during lunch... 😃 I suppose I'm too conservative... But your combo with kiwi and apples could work out, as it does feel like a perfect fit! It adds that "tenderness" to meat and makes the meal more juicy...
