Herring, Potato, and Onion Appetizer in Mustard Sauce\Herings-Vorspeise mit Kartoffeln und Zwiebeln in Senfsauce

Today, we’re cooking an appetizer salad featuring salted herring fillets, boiled potatoes, onion, fresh apples, and a mustard dressing. We’ll cook the dressing using unrefined sunflower oil and mustard. Let’s go—it’s going to be delicious!

Ingredients:
● Herring fillets in oil – 400 g
● Onion – 1 large bulb
● Potatoes – 4
● Apples (peeled) – 2
● Table mustard – 1 tbsp (adjust to taste, depending on the mustard's pungency)
● Ground coriander – a pinch (optional)
● Apple cider vinegar (6%) – 2 tbsp
● Unrefined vegetable oil – 7 tbsp
● Black pepper, hot pepper, salt, sugar, fresh herbs – to taste
1.First, prepare the potatoes and onion. Peel the onion, slice it into half-rings (or smaller pieces), and soak it in cold water. Letting the onion sit in water removes most of its sharp bite. Then, simply drain the water and place the onion in a bowl. Wash the potatoes and boil them in salted water until cooked through; this takes about 30 minutes on average. However, this time I cooked the potatoes in the microwave: I poured a glass of water into a bowl, added the washed potatoes, and microwaved them at 800 watts for 20 minutes. The potatoes cooked perfectly, becoming tender and succulent. All that’s left is to let them cool, peel them, and dice them. Drain the oil from the herring fillets, but—to save resources—you can use that same oil to make the dressing. Cut the herring fillets in half. Core and peel the apples, then dice them. Combine the herring, onion, and apples with 3 tablespoons of the oil from the herring jar. Mix well.

2.Prepare the dressing. Mix table mustard (adjust the amount to taste, as spiciness varies) with 6% apple cider vinegar and the remaining oil (for this step, unrefined oil is a better choice). Add a pinch of black pepper, a pinch of hot pepper, a pinch of coriander, a pinch of salt, and a pinch of sugar. Stir the mustard dressing together. You can also use Dijon mustard; just go with what you prefer.

3.Add the diced potatoes to the salad, pour in the mustard dressing, and toss everything together with the herring.

4.Portion the salad into bowls and serve; garnishing with fresh herbs is a nice touch. The salad can be served warm or cold—and either way, it’s absolutely delicious!

Heute bereiten wir eine leckere Salat-Vorspeise mit gesalzenem Heringsfilet, Salzkartoffeln, Zwiebeln, frischen Äpfeln und Senfdressing zu. Das Dressing machen wir selbst mit unraffiniertem Sonnenblumenöl und Senf. Los geht's, es wird köstlich!
Zutaten:
● Heringsfilet in Öl – 400 g
● Zwiebel – 1 (groß)
● Kartoffeln – 4
● Geschälte Äpfel – 2
● Senf – 1 EL (nach Geschmack, je nach Schärfe des Senfs)
● Gemahlener Koriander – eine Prise (optional)
● Apfelessig (6 %) – 2 EL
● Unraffiniertes Pflanzenöl – 7 EL
● Schwarzer Pfeffer, Chili, Salz, Zucker und Kräuter – nach Geschmack
1.Zuerst die Kartoffeln und Zwiebeln vorbereiten. Die Zwiebeln schälen, in Halbringe oder kleinere Stücke schneiden und mit kaltem Wasser bedecken. Die Zwiebeln im Wasser ziehen lassen, damit die Schärfe nachlässt. Anschließend das Wasser abgießen und die Zwiebeln in eine Schüssel geben. Die Kartoffeln waschen und in Salzwasser weich kochen. Das dauert etwa 30 Minuten. Ich habe die Kartoffeln dieses Mal in der Mikrowelle gegart. Ich habe ein Glas Wasser in eine Schüssel gegeben, die gewaschenen Kartoffeln hinzugefügt und sie 20 Minuten lang bei 800 Watt in der Mikrowelle gegart. Die Kartoffeln sind perfekt gekocht, zart und saftig. Jetzt müssen sie nur noch abgekühlt, geschält und gewürfelt werden. Die Heringsfilets in Öl abtropfen lassen. Um Geld zu sparen, kann man dasselbe Öl auch für das Dressing verwenden. Die Filets halbieren. Die Äpfel entkernen, schälen und würfeln. Hering, Zwiebel und Äpfel mit 3 Esslöffeln Öl aus der Heringsdose vermengen. Umrühren.
2.Das Dressing zubereiten. Senf (nach Geschmack; Senf gibt es in verschiedenen Schärfegraden) mit 6%igem Apfelessig, dem restlichen Pflanzenöl (am besten unraffiniertes Öl verwenden), einer Prise schwarzem und scharfem Pfeffer, einer Prise Koriander, einer Prise Salz und einer Prise Zucker verrühren. Das Senfdressing umrühren. Alternativ kann auch Dijon-Senf verwendet werden; die Schärfe nach Belieben anpassen.
3.Die Kartoffelwürfel zum Salat geben, das Senfdressing darüber gießen und den Salat mit dem Hering vermengen.
4.Den Salat in Schüsseln füllen und servieren. Nach Belieben mit Kräutern garnieren. Dieser Salat schmeckt warm und kalt. Er ist immer köstlich!
