Fried Bacon with Apples\Gebratener Speck mit Äpfeln

Today we’re cooking a simple dish using raw bacon and fresh apples. We’ll wrap apple slices in bacon and fry the whole thing in a pan. You can serve the finished dish with mustard or horseradish, but this time I’ve chosen a warm Asian-style tomato sauce with ginger and garlic. It’s a simple yet hearty recipe. Apples are a great choice for main courses! Let’s go—it’s all about the bacon!

Ingredients:
● Raw bacon – 250 g
● Apples – 5 pcs
● Tomato paste – 3 tbsp
● Fresh ginger – 3 cm piece
● Garlic – 3 cloves
● Apple cider or rice vinegar (6%) – 3 tbsp
● Sugar – 3 tbsp
● Hot pepper – a pinch
● Salt, soy sauce, water, vegetable oil (for frying), sesame seeds, fresh herbs – to taste

1.First, let’s prepare the tomato sauce. Dissolve a good-quality tomato paste in a glass of water. Add the vinegar, sugar, and three tablespoons of soy sauce. Grate the fresh ginger and garlic and add them to the mixture. A pinch of hot pepper won't hurt, either. Heat up a saucepan, add a knob of butter, and pour in the sauce. Bring the sauce to a simmer (until bubbles appear) and turn off the heat. Give the tomato sauce a stir—it’s ready.

2.Core the apples. Cut each apple into 3–4 crosswise slices (depending on the size of the apples; avoid using ones that are too large, as a strip of bacon needs to be long enough to wrap around the apple slice). Lightly season each apple with salt and pepper, then wrap it in bacon. Unfortunately, my bacon slices weren't whole—they were cut in half (raw bacon usually comes in long, narrow strips)—so I couldn't wrap each apple perfectly. But we work with what we have. It’s a good idea to thaw the bacon beforehand and check the length of the strips, then cut your apple wedges to match. Once all the apples are wrapped in bacon, it’s time to fry!

3.Heat the pan and place the bacon-wrapped apples into the sizzling oil. Fry the bacon for 3 minutes per side until a crispy crust forms. Then, flip the bacon over once more, sprinkle with salt and pepper, and remove from the pan.

4.The bacon-wrapped apples are ready to serve with sauce! The salty bacon is crispy, while the apples are soft and slightly sweet.

Heute bereiten wir ein einfaches Gericht mit rohem Speck und frischen Äpfeln zu. Wir wickeln Apfelscheiben in Speck und braten das Ganze in der Pfanne. Man kann das fertige Gericht mit Senf oder Meerrettich servieren. Ich habe mich dieses Mal aber für eine warme asiatische Tomatensoße mit Ingwer und Knoblauch entschieden. Das Rezept ist einfach, aber sättigend. Äpfel sind ein tolles Hauptgericht! Ran an den Speck!

Zutaten:
● Roher Speck – 250 g
● Äpfel – 5 Stück
● Tomatenmark – 3 EL
● Frischer Ingwer – 3 cm
● Knoblauch – 3 Zehen
● Apfelessig oder Reisessig (6 %) – 3 EL
● Zucker – 3 EL
● Chilipulver – eine Prise
● Salz, Sojasauce, Wasser, Pflanzenöl zum Braten, Sesamsamen und Kräuter – nach Geschmack

1.Zuerst die Tomatensauce zubereiten. Hochwertiges Tomatenmark in einem Glas Wasser auflösen. Apfelessig, Zucker und drei Esslöffel Sojasauce hinzufügen. Frischen Ingwer und Knoblauch reiben und dazugeben. Eine Prise Chilipulver schadet nicht. Einen Topf erhitzen, ein Stück Butter hineingeben und die Sauce angießen. Die Sauce aufkochen lassen und vom Herd nehmen. Die Tomatensauce umrühren; fertig.

2.Die Äpfel entkernen. Jeden Apfel in 3–4 Spalten schneiden (je nach Größe, aber keine sehr großen Äpfel verwenden; ein Stück Speck reicht, um jede Apfelspalte einzuwickeln). Die Äpfel leicht salzen und pfeffern und mit Speck umwickeln. Leider war mein Speck nicht ganz, sondern halbiert (roher Speck ist normalerweise in langen, schmalen Streifen erhältlich), daher konnte ich die Äpfel nicht richtig einwickeln. Aber wir machen das Beste daraus. Es ist ratsam, den Speck vorher aufzutauen, die Länge der Streifen abzumessen und die Äpfel entsprechend zu schneiden. Alle Äpfel sind nun in Speck gewickelt und bereit zum Braten!

3.Eine Pfanne erhitzen und die mit Speck umwickelten Äpfel in heißes Öl geben. Den Speck von jeder Seite 3 Minuten braten, bis er knusprig ist. Dann den Speck wenden, mit Salz und Pfeffer bestreuen und aus der Pfanne nehmen.

4.Die mit Speck umwickelten Äpfel sind fertig zum Servieren mit der Soße! Der salzige Speck ist knusprig, und die Äpfel sind weich und süß.

5.Verteilen Sie den Speck auf Tellern und genießen Sie das köstliche Gericht.
