Cabbage Salad with Ketchup Dressing\Krautsalat mit Ketchup-Dressing

Today we’re cooking a simple fresh white cabbage salad. This salad, featuring a dressing made from tomato ketchup and Worcestershire sauce, is incredibly easy to cook. You simply shred the cabbage, squeeze it with your hands until it releases its juices, mix up the dressing, and it’s ready to go. The real secret lies in that complex, flavorful dressing. Let’s go—it’s going to be packed with vitamins!

Ingredients:
● White cabbage – 1/4 head (400–500 g)
● Ketchup – 5 tbsp
● Unrefined vegetable oil – 4 tbsp
● Wine vinegar – 1 tbsp
● Sugar – 1 tbsp
● Salt – a pinch
● Worcestershire sauce – 2 tbsp
● Fresh herbs, black pepper – to taste
1.Remove the tough outer leaves from the cabbage, discarding any damaged or discolored parts. Shred the cabbage into pieces of your preferred size. I use a special double-bladed cabbage shredder—it’s a really handy tool. A quick zip-zip and the cabbage is ready! Add a pinch of salt and a spoonful of sugar to the cabbage, then squeeze and knead it with your hands until it releases its juices. A little extra workout never hurts! Okay, the cabbage has released its juice; now we can make the dressing. Add 5 tablespoons of ketchup, a tablespoon of 6% wine or apple cider vinegar, 4 tablespoons of vegetable oil (I used sunflower oil), and 2 tablespoons of Worcestershire sauce (you can substitute fish sauce or add balsamic glaze—it’s not quite the same, but it works) to the bowl with the cabbage. Finally, add ground black pepper to taste. Mix the salad thoroughly, cover the bowl with a plate, and let it sit on the counter for a couple of hours to allow the flavors to meld. You can serve the salad at room temperature or chilled; if you prefer it cold, place it in the refrigerator for an hour.

2.Portion the cabbage and ketchup salad into serving bowls and garnish with fresh herbs and/or green onions. It turned out quite well! The ketchup gave the salad a reddish-yellow hue and an interesting flavor. It’s a fantastic, vitamin-rich cabbage salad—perfect for winter!

Zutaten:

● Kräuter, schwarzer Pfeffer – nach Geschmack
1.Schälen Sie den Weißkohl und entfernen Sie dabei alle harten, beschädigten oder schwarzen äußeren Blätter. Schneiden Sie den Kohl in mundgerechte Stücke. Ich benutze dafür einen speziellen Kohlhobel mit zwei Klingen; der ist super praktisch. Schwupps, und schon ist eine Portion Kohl fertig! Geben Sie eine Prise Salz und einen Löffel Zucker zum Kohl und drücken Sie ihn mit den Händen aus, bis Saft austritt. Bewegung tut immer gut! So, der Kohl hat seinen Saft abgegeben, jetzt ist es Zeit für das Dressing. Gib 5 Esslöffel Ketchup, 1 Esslöffel Wein oder 6%igen Apfelessig, 4 Esslöffel Pflanzenöl (ich habe Sonnenblumenöl verwendet) und 2 Esslöffel Worcestershiresauce in die Schüssel mit dem Kohl. (Alternativ kannst du Fischsauce oder Balsamico-Essig verwenden; es schmeckt nicht ganz so gut, aber es funktioniert.) Würze mit gemahlenem schwarzen Pfeffer ab. Vermische den Kohlsalat gut in der Schüssel, decke sie mit einem Teller ab und lasse ihn ein paar Stunden bei Zimmertemperatur ziehen. Du kannst den Salat bei Zimmertemperatur oder kalt genießen; in diesem Fall stelle ihn für eine Stunde in den Kühlschrank.
2.Verteile den Kohlsalat mit Ketchup auf einzelne Schüsseln und garniere ihn mit Kräutern und/oder Frühlingszwiebeln. Er ist wirklich lecker geworden! Der Ketchup hat dem Salat eine rötlich-gelbe Farbe und einen interessanten Geschmack verliehen. Ein toller, vitaminreicher Kohlsalat! Diese Salate sind besonders im Winter köstlich!
