The dinner menu on September 7th was something special. My youngest daughter came up with the idea. After returning from school and showering, she asked, What should we have for dinner tonight Before I could answer, she suggested a creative recipe: Mom, why don't you try making fried rice with minced pork and minced chicken
As soon as I heard about this idea, I immediately agreed without hesitation. There's nothing more satisfying than cooking something that my family would love to eat. Especially when it's a dish my little daughter has the idea for, I just had to get going!
Without further ado, my daughter and I headed into the kitchen to make this special dish a reality.
Cooking together with my kids is a warm and joyful time. We pull out ingredients from the fridge, laugh, and chat happily. Cooking isn't just about cooking, it's about creating wonderful family memories. Beyond the joy, this dish is also packed with nutrients. Pork and chicken provide protein, while vegetables add vitamins and fiber, making it a one-dish meal that's both delicious and healthy.

This dish is super easy to make, simple, and sure to please both kids and adults.

Preparation and Cooking Time: 20 minutes
Ingredients
- 3 cups chilled cooked rice
- 100 grams minced pork
- 100 grams minced chicken
- 1 tablespoon minced garlic
- 1/4 onion, diced
- 1/4 tomato, diced
- 2 tablespoons chopped green onions
- 3 eggs
- 2 tablespoons oyster sauce
- 1.5 tablespoons light soy sauce
- 1 teaspoon sugar
- 1/2 teaspoon ground pepper
- 3 tablespoons vegetable oil for stir-frying
- Cucumber and lettuce, for garnish
Method
- Prepare ingredients: Heat a pan over medium heat. Add a little vegetable oil, then add the minced garlic and fry until fragrant.
- Stir-fry the meat: Add the minced pork and minced chicken and stir-fry until cooked through and well distributed.
- Add rice: Add chilled cooked rice and stir to combine with all ingredients. Use a spatula to break up the rice so it doesn't clump.
- Beat the eggs and add them. Add the diced onion and tomatoes and stir-fry with the meat until tender.
- Seasoning: Season with oyster sauce, light soy sauce, and sugar. Stir-fry to combine.
Stir-fry all ingredients together until well combined. Season to taste.
- Add the spring onions: Add the chopped spring onions and toss to combine. Turn off the heat.
- Scoop the fried rice onto a plate and garnish with cucumber and lettuce for a refreshing touch.
- Sprinkle with a little ground pepper for extra flavor. Serve.
