Discovering the Delight of Economic Vegetarian Bee Hoon

One of the staple foods in the city is what we call "economic bee hoon." Most hawker food centers have at least one stall that sells this beloved dish. It’s designed to be affordable for everyone, yet it’s so delicious that even the wealthy will queue up for it.

Economic bee hoon is typically served for breakfast, though you can enjoy it any time of the day. It's so popular that it often sells out before lunchtime. The combination of great taste and affordability makes for a business model that ensures a food stall's success.

There are various types of economic bee hoon available nationwide. This particular one is a vegetarian version. While I’m not a vegetarian, I enjoy trying vegetarian dishes. I combined two types of bee hoon in a single order, thanks to the accommodating vendor. This way, I could sample both without wasting food.

For toppings, I chose sautéed eggplant in spicy dark sauce, a fried egg, and deep-fried sweet taro wrapped in rice paper.

Between the two types of bee hoon, I preferred the wide version. Its texture was more appealing, and it absorbed the sauce's flavor beautifully. The white bee hoon was good but a bit dry, making it a better match for the saucier toppings.

I loved the eggplant! Its texture paired perfectly with the white bee hoon, and its sauce was the highlight of the meal.

The deep-fried taro was a pleasant surprise. I initially thought it was a savory spring roll but was delighted by its sweet filling.

Overall, it was a great experience. I felt thoroughly satisfied after finishing the meal.
