Cook With Me: Beef Stew with Mushrooms and Vegetables

let’s cook something together today!

I suggest making a hot and spicy beef stew with mushrooms and vegetables. What do you say? You are in? Let’s go!

Let’s start with a list of ingredients:

  • 500 g beef cut in cubes
  • 1 l beef bone broth
  • one small onion
  • one garlic clove
  • 1 red chili pepper
  • chili flakes in oil
  • frozen vegetable mix
  • mushrooms
  • spices (salt, black pepper, bay leaf, anything else you like)

    We start by chopping the onion into small cubes, chopping the chili pepper into fine pieces, crashing and then chopping the garlic:

Then we put the chopped onion, garlic, and chili pepper into a hot olive oil in a frying pan:

…and shortly after we add the meat and the bay leaf:

At this point you can add salt and other spices to the mix.

While the meat is frying in a pan, we pour the beef bone broth into a separate cooking pot and heat it up:

After about 15 minutes we will add the contents of the frying pan into the broth – it should be almost boiling by now – and put the frozen vegetables mix onto a frying pan to warm it up:

We can also add chili flakes in oil into the cooking pot with meat, depending on how hot you like your food. 🌶️🔥🌶️🔥🌶️🔥

Now we prepare the mushrooms, separating them from each other:

We let the mushrooms cook with meat for about 20 minutes and then add the vegetables into the pot:

And, in about 5 minutes, the dish is ready to serve!

This is what i like to call as "comfort food"... and so good to "go" with the cold days that are coming! I have to cook for myself, since I live alone, but most of the times I'm not doing more elaborated dishes, because I think that most of the "fun" is to share the meal with another person. And when we cook only for our selfs, that fun transforms in more practical and easy cooking... But I think I'll try this recipe in one of the future weekends in winter time!

I'm totally with you here! When I just cook for myself, I'm trying to make something as quick and simple as possible, because I don't want to invest too much time into sourcing the ingredients and preparing an elaborate meal. But when Angela is staying over, or when I'm inviting friends to dinner at home, then I go all in and try to prepare something interesting and delicious. Cooking for others is much more fun than cooking for oneself, I agree 💯%!
