Una rica sopa para recuperar energías.....Esp-Eng

Saludos mis chefs de esta rica comunidad, donde nos une el buen sabor de todo lo que aquí presentamos de esos platos sabrosos que preparamos en nuestros hogares para deleitar a la familia y a uno mismo.

Si es bueno ir a un restaurant, comer, pero nada como la comida, que preparamos en nuestras casas, donde sabemos lo que ponemos, lo hacemos a nuestra manera y gusto.

En la semana pase un malestar grande con un virus que andaba en el medio, que a mi me dio con escalofríos, malestar estomacal y que no salía del baño, cuando uno se siente así, uno le provoca es una sopa, para recuperar energía y fuerza.

Cuando me sentí mejor, salí a comprar los ingredientes para mi sopa, hecha el domingo.

Ingredientes:

-Huesos rojos.
-Verduras varias: batata, yuca, yancin, auyama.
-Aliños: cilantro, celery, cebolla, pimentón.
-Condimentos: sal, cubitos de pollo.
-Agua lógicamente.

Preparación de la sopa:

-Lo primero es siempre cocinar los huesos rojos, que es donde esta el gusto el sabor, escogí unos buenos con algo de carne. Los lave muy bien, los coloque en la olla de presión (si tienen una es lo mejor, mas efectiva y mas rápido), con agua que los cubra, le puse sal , medio cubito, hojas de celery y cilantro. Cerre y espere 30 minutos.

-Mientras se cocinaban los huesos, adelante las verduras, las pele, pique en cubos, para luego lavarlas muy bien, y las tape un momento a esperar que los huesos estuvieran listos.

-Los aliños los lave pique en trozos, que luego los licue, asi los que no les gusta, no lo van a estar sacando.

-A los 30 minutos, apagué la olla, abrí, comprobé que los huesos o la carne que traían estuvieran bien, porque los huesos difícilmente se van a ablandar es un decir de nosotros.

-Saque los huesos a un envase, también reserve algo del caldo, como la mitad de lo que había en la olla de presión.

-En otra olla donde hago mis sopones, le coloque aceite, el otro medio cubito y las verduras, las sofrei un rato, le coloque algo del caldo de la olla y tape como 10 minutos.

-Luego pase las verduras a la olla de presión, le coloque mas agua, no la que reserve, una taza de frijoles que tenia en remojo de hace días, sal y tape a cocinar por 10 o 15 minutos.

-Pasaron los 15 minutos, la verdura ya estaba lista, asi que pase todo de nuevo a la olla sopera, también los huesos y el caldo reservado, probe la sazon, le faltaba algo de sal y listo.

-La deje cocinando unos minutos mas.

-Servi la sopa, con casabe es el acompañante ideal, jugo de lechosa, medio limon tanto para la sopa como para el jugo les da un toque y sabor especial.

-Como solo estamos mi hijo y yo en casa, comimos y guarde sopa para otro dia.

It’s nice to go to a restaurant and eat, but nothing beats the food we make at home, where we know exactly what goes into it and can prepare it just the way we like it.

This past week, I was really under the weather with a virus going around, which gave me chills, an upset stomach, and kept me stuck in the bathroom. When you feel like that, all you crave is a soup to regain your energy and strength.

Once I felt better, I went out to buy the ingredients for my soup, which I made on Sunday.

Ingredients:

-Red bones.
-Various vegetables: sweet potato, cassava, yam, pumpkin.
-Herbs and spices: cilantro, celery, onion, paprika.
-Seasonings: salt, chicken bouillon cubes.
-Water, of course.

Soup Preparation:

-The first step is always to cook the red bones, which is where the flavor comes from. I chose some good ones with a bit of meat on them. I washed them thoroughly, placed them in the pressure cooker (if you have one, that’s best—it’s more effective and faster), covered them with water, and added salt, half a bouillon cube, celery leaves, and cilantro. I closed the lid and waited 30 minutes.

-While the bones were cooking, I prepared the vegetables: I peeled them, diced them, washed them thoroughly, and set them aside for a moment while I waited for the bones to be ready.

-Wash the herbs, chop them into pieces, and then blend them—that way, those who don’t like them won’t have to pick them out.

-After 30 minutes, I turned off the pressure cooker, opened it, and checked to make sure the bones or meat were cooked through, because, as we say, the bones hardly ever get tender.

-I transferred the bones to a container and also set aside some of the broth—about half of what was in the pressure cooker.

-In another pot where I make my soups, I added oil, the other half a bouillon cube, and the vegetables. I sautéed them for a while, added some of the broth from the pot, and covered it for about 10 minutes.

-Then I transferred the vegetables to the pressure cooker, added more water (not the water I’d set aside), a cup of beans I’d had soaking for a few days, salt, and covered it to cook for 10 to 15 minutes.

-The 15 minutes were up, the vegetables were ready, so I transferred everything back to the soup pot, including the bones and the reserved broth. I tasted it—it needed a little more salt—and it was ready.

-I let it cook for a few more minutes.

-I served the soup; cassava bread is the perfect accompaniment. Add some soursop juice and the juice of half a lemon—both to the soup and to the juice—to give them a special touch and flavor.

-Since it's just my son and me at home, we ate, and I saved some soup for another day.
