Eggplant- Growing Food and Cooking it
I grow eggplant, and this is an example. The plant grows in the Summer, and needs ample Sun to be successful.
This is a month old, and came from a plant started in a pot and transplanted into the garden raised bed.
In order to cook it to eat, simply cut the fruit off the plant and cut the fruit into sections. It is a hearty fruit that can be made into slices, noodles or added to any dish to replace meat. It is a good replacement for hamburger, so if you have a hamburger buns, fry it on the grill, add salt and tomatoes and you have a burger.
Despite the long growing period, this is a versatile food and is high in fiber. I highly recommend it as a meat alternative and a healthy snack.
