Hello, my lovely friends 🙏

Today is a day off for many of you! It's Saturday, and the kids are off school, and so is my daughter. It's a great opportunity for us to relax and do our favorite activities together.
As for my shop... even though it's a holiday, I have to be honest, it's like every day is off anyway, since there aren't many customers. 😂 So today is a special day, and I'm determined to recharge my energy before continuing the gardening work from yesterday.

👩‍🍳 Get Ready: Easy, All-In-One Recipe

Before I head out to the garden to mow, I'm going to whip up a quick lunch that's easy and delicious, with ingredients already in my fridge: Pork Curry Fried Rice.
I started by pulling out all the ingredients from the fridge and back yard. Looking at the picture, it looks absolutely delicious!

  • Pork: Rinse thoroughly and cut into thin, bite-sized pieces. Set aside.
  • Eggs: Crack at least 4-5 eggs into a bowl. (Looks so delicious!)
  • Red curry paste: The heart of this dish. Set aside 2 tablespoons.
  • Vegetables: Go all out with freshness!
  • Sweet corn (cut into pieces or sliced with kernels)
  • Tomatoes and onions
  • Garlic (crushed or roughly chopped)
  • Chili peppers (for color and spiciness, to taste)
  • Freshly picked basil leaves from my backyard garden.

🌶️ Recipe and Method: Thai Spicy Pork Fried Rice

This dish emphasizes the rich aroma of curry paste and the richness of eggs. It's easy to make, delicious, and will give you plenty of energy before a strenuous workout. In the garden, for sure.

Fish Sauce1-2 Teaspoons
Sugar1/2-1 Teaspoon
Oyster Sauce1/2 Tablespoon
Vegetables of Choice (Corn, Tomato, Onion)1/2 Cup
Basil Leaves1 Handful (Pluck Only the Leaves)
Vegetable Oil2 Tablespoons

How to make it

Stir-fry garlic and curry paste

  • Heat a pan with a little vegetable oil and bring to a scorching heat.
  • Add the pork and stir-fry, then add the minced garlic and fry until fragrant.
  • Pour the eggs into the pan (pushing the pork mixture to the side). Scramble the eggs and wait for them to set.

  • Add the red curry paste to the oil and stir-fry over medium-low heat until fragrant. (Frying the curry paste until fragrant will greatly enhance the flavor of the fried rice.)

  • Increase the heat slightly and add the sliced pork and stir-fry until almost cooked through.

  • Add the vegetables that take longer to cook, such as onions and corn, and stir-fry to combine.

  • When the vegetables begin to soften, add the tomatoes and stir-fry briefly.

  • Seasoning:

  • Season with fish sauce, sugar, and oyster sauce (taste and adjust as needed).

  • Add basil leaves and chili peppers (if using) and stir-fry for another 1-2 minutes.

  • Add rice:

  • Immediately add cooked rice over the eggs and use a spatula to chop and toss quickly to combine the rice with the eggs and curry paste. (The key is to use high heat and stir-fry quickly.)

  • Stir-fry until the rice is dry and beautifully crumbly.
    Then, immediately turn off the heat (to keep the basil green and fragrant).

🥗 Serve and get ready to sizzle.
Scoop the fragrant pork curry fried rice onto a plate and garnish with lime, cucumber, or fresh vegetables as desired. This dish will surely energize and delight your gardening efforts. 💪
