Today, I have a special recipe for you, made with freshly picked ingredients from my garden. After spending some time in my garden, I came across an interesting herb and local vegetable: "Melientha Suavis," also known as "Melientha Suavis." Melientha Suavis is a local vegetable with a unique flavor and numerous health benefits. I have a few Melientha plants growing in my garden, so today I picked some of the young shoots to create a simple yet delicious dish: Stir-Fried Melientha Suavis with Egg.
For this recipe, I used freshly picked eggs from our own garden coop. I guarantee it's fragrant, delicious, and packed with nutritional value.

To make stir-fried morning glory with eggs, the flavor is well-balanced and the vegetables remain crisp and delicious. These are a few easy steps.

  1. Vegetable and ingredient preparation
  • Clean the vegetables: Clean the harvested morning glory leaves, plucking only the tender leaves and tips. Remove the hard stems.
  • Soak and rinse: Wash the plucked morning glory leaves thoroughly in water at least 2-3 times to remove any dirt or debris. You can soak them in water mixed with a little salt for about 5 minutes, then rinse thoroughly with clean water. Drain thoroughly or place them in a colander to set aside.

  • Prepare the eggs: Crack the eggs into a bowl and set aside (no seasoning needed).
  • Prepare the garlic: Peel the garlic and crush or roughly chop. Set aside for frying.
  1. Stir-frying
  • Fry the garlic: Heat a pan and add vegetable oil. When the oil is hot, add the crushed garlic and fry until fragrant and golden brown, but do not let it burn.

  • Add the eggs: Push the garlic to the side of the pan and pour in the prepared eggs. Scramble the eggs slightly and wait for them to set.

  • Technique: For beautifully shaped eggs, stir-fry until about 80% cooked. Remove and set aside. Add them back in the final step.

  • Stir-fry the vegetables: When the eggs are almost cooked, increase the heat slightly and add the drained celery shoots. Stir-fry quickly over high heat to cook the vegetables quickly and maintain their crispness and beautiful green color.

  • Seasoning: Season with fish sauce, light soy sauce, and sugar. Quickly stir-fry to combine (about 1-2 minutes). Taste and adjust seasonings as desired.

  • Do not over-stir, as this will cause the kale shoots to become soft and dark in color, making them unappetizing.

  • Finished: Scoop the stir-fried morning glory with the cooked, fragrant eggs onto a plate and serve with hot steamed rice. If you like, sprinkle with a little ground pepper for extra flavor.
