Fish Head Fry & Fish Curry
As the winter sets in, people start to craving for hot and spicy stuffs. From Mutton, to egg To Fish. People need an excuse to crave for it. Rightly so, today I had a chance to enjoy Fried Fish out of nowhere
Fish curry or fried fish is one of the most favored dishes in my area. Honestly speaking, if cooked properly we get the best authentic taste even in the remote areas like we have. Our dishes are mostly spices based but there are many people like me, who enjoy the simple fried pieces. It is as crispy, as it get and always munching. We have so many restaurant who serves fresh fishes every day in lunch or at dinner.
We have mainly fresh water fishes round thanks to local dam , river and pond, we so get some vest variety , including Rohu and Katla as lovable choices. Todsy I visited a friend's home only find a chance to enjoy fried pieces. They were insisting me for curry as well, but I prefer to leave the place.
When I reached there, all preparstion were already been done in advance and the cooking process has already started. We have
- fresh water fishes, properly smeared in turmeric and salt.
- Chopped Onion for fish curry
- all Indian spices (ginger, chili, tomatoes,black pepper and others.
They were also ready with the fish j testing portion as well. Many people.loces to eat them. They are soft juicy portion and doesn't need much cooking time. They can be baked instantly and taste bit bitter.
The cooking process is vit lengthy, as each of thr fish prices needd to be deep fried before being dipped in spicy curry. We generally have a seperst3 cooking stove or mud stove at every home for cooking non - veg recipe. Here we were using a small gas stove and cooking kadhai were placed rightly to make the frying easy.
One by one all the pieces were placed inside the oil and leave it for slow flame. It allow the fish pieces to be fried deep inside and becomes crispier. The oil quantity inside thr kadhai was too less. Enough to fry the pieces properly.
All thr fried pieces were taken out carefully one by one and placed separately in other plate. The fish fry is ready. These same fried pieces were further added and dipped into the spicy curry to give it authentic fish curry taste.
The process is not so lengthy, all the spcjes, onions, tomatoes were fried and then add water to boil and make a proper mixture. Once it get ready simply place the fishes into it, and let it dipped for fee minutes to get the syrup get inside it.
I didn't have time for so long, so I munched on few fried pieces and moved on back to home. But as the winter has started I might end up with more of such lost opurtunity. As people would love to have fish and mutton on most of thr ocassion to beat the chill. Hope you enjoyed the little recipe from my book.
