Hello Hivers, Happy beginning of the week! Part of the charm and attractiveness that gastronomy has and what we offer for consumption, is in a nice decoration that impacts the diner and makes them want to capture in photos, weaving for the memory of what was taken or eaten in such a place. And this also helps the publicity of the site, because there is no better publicity than that made by the customers themselves sharing their moments.

This week my husband and I started to dehydrate fruits, to have them stored when preparing cocktails, so we have everything ready to decorate them. This time we dehydrated: lemon 🍋, orange 🍊, pineapple 🍍 and coconut 🥥. This is something that takes us a whole week to do, as we put in the time it takes, as well as being thorough.

The dehydration process is very important for us, since we take care of many factors, such as an even dehydration, that it does not burn, take care of the temperature so that the fruit does not lose its main characteristics and that it has a nice golden color. The sugar helps us with the latter, giving it a beautiful golden color.

The dehydration of fruits with high percentage of hydration such as lemon, orange, grapefruit, etc. Should not exceed 60⁰C. On the other hand, in fruits with high percentage of oil such as coconut, if it becomes a little higher, but that does not reach no more than 80⁰C, so that they do not begin to release the oil and fry. This way, they can not only add color, but also smell and, in the case of coconut and pineapple, a delicious flavor.

The truth is that we love doing this and we enjoy it very much, we do not mind that it takes us a week, because it is part of our work beyond a bar, also at home we usually work. Seeing the happy faces of our customers is something we enjoy. Also that they recommend our work, because they know it is something good, it fills us.

On this occasion I was able to take some pictures that I really loved the way they looked and I share them with you. A big hug to all of you.
