Hello everyone!

I hope you are all having a nice and productive week so far!

Two days back I received some green lemons from my brother in law (from his garden) and it is only today that I got the time to put them in salt and let them confit for couple of weeks before using in different dishes on my menu!

Making green lemon confit or any other citrus confit is quite easy as you need only rock salt or coarse salt, lemons and a jar with cover to store them!

I simply washed the lemons, cut the bottom part and open the top part in quarters as you can see in the photos. Next I filled each lemon with salt and place in the jar to macerate and confit with time.

All lemons were place in the jar and I added more salt on top.

Lastly I placed the closed jar in a dry and cool place to let confit. It will take less than a month to start getting ready and you can keep them for years after that in the fridge!

Yes! I preserve lemons and limes this way! I like to use them in cocktails and poultry recipes.
