Another dish from The Savoy Tasting Menu. Here is what followed the Beef Wellington.

Madong 70% Chocolate Crémeux

Lemon and lime bavarois, cardamom

First of all I had no idea what a Madong was and to be honest with you, I still don't know what a Madong is. I can describe what was served best from memory as it was a while ago now. I remember this dish being very chocolatey. The main centrepiece I believe was like a really smooth and rich chocolatey cream. The two balls on the dish were citrussy. From memory I think one was lemon flavoured and one was lime. I couldn't tell you which one was which. I was too busy enjoying the time I had there and feeling so good with all the flavours that had been and carrying on inside my mouth. I can't remember where the cardamom was or was that inside the balls? Who knows? All I remember was I enjoyed every single mouthful.

This was one piece of art for a dessert. I've never seen a desert plated up like this with the shapes. I do like chocolate desserts but I like citrus too as it's refreshing after such a big meal. This had the best of both worlds. Yum!
