Classic Beef Wellington
Pomme purée, sprouting broccoli, red wine jus
When this Beef Wellington was served I couldn't wait to get stuck in. The cook on the beef was perfection. Both my husband and I wanted medium rare and that's exactly what we got. The beef was so tender and melt in your mouth. I had Beef Wellington at the Ritz in London for my birthday earlier on in the year and I didn't think anything could top that. Well this one did! The pastry was so thin surrounding everything and it was lovely and crispy. From memory it was a green thin pancake and a mushroom pâté that surrounded that gorgeous bit of beef. Words cannot describe how good this was. The red wine jus was on the side in a small delicate jug and it had such a rich colour and glossy sheen. I'm not a fan of red wine, but this jus was so yummy and it brought out the meatiness of the Wellington. Not forgetting the pomme purée. This was so silky and buttery and of course you had a perfectly bit of sprouting broccoli too.
All I've got to say is Yum!! I don't think any other Wellington will be able to top that. I guess I have to find an excuse to go back again for this dish alone. A perfect dish all round.
