Escalope viennoise
Salut à tous, un grand classique quand j'étais à l'école hotellière, l'escalope viennoise.
Une escalope de veau panée avec une garniture d'oeufs durs, de câpres, olives et anchois.
Pour la panure faire une anglaise, une assiette de farine, un oeuf battu et du pain sec mixé.
Passer l'escalope dans la farine, puis l'oeuf, puis la panure.
Pour la cuisson de veau il ne faut pas saisir la viande, la mettre à cuire dans un mélange d'huile et de beurre. Il faut frire la panure mais à feu moyen.
Pendant ce temps hacher les câpres. Séparer les blancs des jaunes pour les oeufs durs, et enrouler les filets d'anchois autour des olives.
Dresser un cordon de câpres, puis de blanc d'oeufs, puis les jaunes.
Quand l'escalope est cuite, poser deux olives enroulés d'un filet d'anchois.
