Hello everyone, today I'm taking you into the kitchen again. However, today I won't be sharing a recipe because I cooked in a hurry and didn't have time to photograph every step. But if there's an interesting menu and I have time, I'll share the recipe for you all to try.

Today's meal is a family lunch, a simple dish, though not entirely simple because it had to be prepared quickly due to time constraints.

The food is suitable for everyone and isn't too spicy or strongly flavored. It consists of baked potatoes, baked pumpkin, and today we added chicken nuggets bought from the market, which we baked separately. These three items are easy to bake in the oven, leaving us time for other things.

Today I made fried chicken because I had baked chicken the other day. I wanted fried chicken, but I had already marinated it. About 30 minutes before mealtime, I fried the chicken briefly. While waiting for the chicken to cook, I had time to prepare other things.

Today I also made mango salad with minced meat. I don't make this dish often, as I said, I don't have much time. But today I had leftover mango and hadn't had this dish in a while, so I quickly made it. I just stir-fried the meat until cooked, then sliced ​​the mango. I didn't stir-fry the onions or garlic; I preferred to eat them raw, which is also delicious.

The next dish is Khanom Jeen (rice noodles) with fish kidney curry. I got the curry paste ready-made, but I added some seasoning to make it extra broth for the rice noodles. This dish is very spicy, and it's delicious with rice noodles and fresh vegetables (or any other vegetables you have).

I made most of these dishes myself. The ones I make often, I've become quite skilled at, especially Thai food. Even though some dishes have complicated steps, once you're proficient, you gain confidence, and the flavors you create are to your liking.

And that's our lunch! We enjoyed our meal immensely. I ate the Khanom Jeen with fish kidney curry all by myself because it has a unique, strong, and spicy flavor – I really love this dish. I hope everyone enjoyed my post and photos. Thank you for following and have a great day!
