One day, I went to an Asian store and saw Kosujang sauce, which is a Korean chili sauce that I had been looking for for a long time. I had an idea to make kimchi, so I bought Chinese cabbage from the Asian store. Once I had the main ingredients, I prepared the other items the next day. Once I have all the ingredients, let's make kimchi.

The ingredient🥬 🥬

  • Chinese cabbage
  • Carrot
  • Spring onion
  • Onion
  • Apple
  • Garlic
  • Ginger
  • White sesame
  • Kosu-chan
  • Salt
  • Fish sauce

The method 🥬🥬

  • Cut the Chinese cabbage into pieces and soak it together with carrots and spring onions in water with salt for about 3-4 hours.

  • Then come prepare the sauce that will be used for marinating. By taking apple, ginger, garlic, and onion, cut them into small pieces and put them in a blender.

  • When everything is blended until fine, then mix in the gosujang. Add about two tablespoons of fish sauce. Some recipes mix in glutinous rice flour to add sourness, but I don't mix it because I want to eat it for a long time so it doesn't become sour.

  • When waiting for the vegetables to be soaked in salt, take those vegetables, squeeze out the salt water and wash them so that they are not too salty. Mix it with the sauce that we cooked and squeeze it to mix well. Taste and add seasoning as desired. Some people add sugar.

  • Store in a jar or box with a tightly closed lid and place in the refrigerator. Some recipes don't need to be refrigerated, leave for 14-18 hours and then refrigerate.
