Tropical Fruit Salad Trio - Hive Top Chef

Papayas, Bananas, and Pineapples are three fruits that are freely available year-round in our subtropical region, so you will often find fresh fruit salad on my summer menu, one of my absolute favourites, and for once, a healthy, dessert!

We used to grow our own Papayas, but the trees became way too tall.
The monkeys and birds ate the fruit right at the top, and we used to pick the lower unscathed ones.
They were top-heavy with fruit, and not having a strong root system, took turns in giving up the ghost.

We now buy this fruit from the greengrocer. Hubby came home with two beautiful ripe papayas the other day, but guess what I also bought on the same day? Yep, a nice big ripe Papaya :)
I had a Pineapple and a couple of ripe Bananas in my fruit basket as well.

I've been absent from @qurator's Top Chef for a long while now, but hope to be more regular now that life is returning to normal after two very difficult years.
When I saw this week's Qurator's Hive Top Chef | Only Three Ingredients Challenge, I knew exactly what I was going to make, nothing could be easier as well!

Tropical Fruit Salad Trio
  • 1 Papaya - peeled and diced
  • 1 Pineapple - grated
  • 3 Bananas - sliced (the pineapple juice stops it from browning)

Preparing a fresh fruit salad can be quite a messy job, but is so worth it and is zero-waste as we not only enjoy the natural sweetness of the summery fruit salad, but I throw the peels outside for the monkeys, and whatever is left, goes into the soil, helping with nutrients.

Time to put the fruit salad together, nothing else is added, simply a quick stir to mix the fruit evenly.
It's quite interesting seeing how different the lighting makes in the photos.
The first two were taken inside, looking a tad pale, but the third one taken outdoors really speaks of a summery tropical fruit salad.

I left the fruit peels outside on the lawn, and hope that the monkeys indeed come out foraging today before I finish my post, so I can take a snap of them, but it's getting a bit late for that so they're likely will only come out at daybreak, when I'm only waking up.

The pineapple tops can be planted - place them in a glass bottle filled with water, till it starts rooting. I however plant it straight into the ground during our rainy summer season. It's a long wait to get fruit - approximately three years but is a pretty plant with its spikey foliage.

I am so envious that you can get all those fruits all year round. Have you thought of adding some mint to that combination?

I love mint but have never thought of adding it to fruit salad, will give it a go - still have 2 ripe papayas left :)

Do. You won't be disappointed. That reminds me. Somewhere in one of my Jenny Morris books, is a recipe with pineapple and mint. Must look for it.

It really looks refreshing and delicious. Even, pineapple Is one of my favorite fruits. So, I love papaya and pineapple juice combination. Thanks for this healthy dessert. I Will try it.👍🏻☺️🍍🍌

Summer arriving this is top of the list for light lunches, variations or similar except I have never grated my pineapples, new trick perhaps!

Looks amazing presentation, the peels will be scooped up by the monkeys in no time at all perhaps even some birds, so keep the camera ready.

Somehow when one grates it, the real flavour of pineapple comes out!
I sometimes bring grated pineapple to a boil with a little sugar added and thicken it with custard powder, it gets a totally different flavour, really yummm served with cream or custard, and makes a great filling for a flan or tart.
The monkeys may have taken it early this morning as I put it out late afternoon, hopefully not so I can spot them, or the birds.

It's a sweet magical bowl of sunshine. We can't always get nice tropical fruits here. This salad reminds me of what I always had for breakfast when I would go to Cuba. I've been there five times. The papayas there grow so large, they look like baseball bats and the citrus is over the top full of juice. You have made a bowl of good memories for me. Cheers my friend!

I'm so glad this brought back good memories Carolyn! The fruit is so delicious, I still have the other 2 papayas, so we'll be eating fruit salad this week, I also love having it for breakfast with yogurt, sure it would be delicious with coconut cream!
