A Week of Cheesy Bakes, and Rockin' and Rollin'!

The week gone by has been very exciting and busy, but it also brought about some real scares! I was sore and exhausted at the end of the first day. While all was calm, I had tons of energy and the baking gremlins bit. I ordered cheese online, and a huge block of cheese arrived; way too much for little old me. I could bake something cheesy!
Instant Featherlight Cheese Puffs.

Instant Featherlight Cheese Puffs ingredients

• 250ml Self-Raising flour
• 5 ml Baking Powder
• 1/3 teaspoon Salt, flavoured salt and pepper
• Herbs of choice - I added parsley, spring onions
• 1 Egg
• 250mn Milk
  
  Very easy to mix: sift dry ingredients, add balance of dry and mix using a whisk.
  Beat wet ingredients, add to dry mix, and stir till blended.
  Spray small muffin tins well with baking spray, and bake approx 12-12 minutes on 200C
  Delicious when adding savoury fillings for snacks.

I'd made some cheese scones the day before, in time for afternoon tea - cream and strawberry jam and others simply grated cheese. I had enough to take to my family-in-law. Enjoyed by all!

I decided to install an air conditioner, not for indoor cooling, but in preparation for the icy winter in my new environment! It's going to be used to keep the temperature even, not hot in winter, and not cool in summer! My apartment feels like there's an air conditioner blowing full blast on the coldest temperature. Summertimes are lovely, and the ceiling fans are super effective.

So many regulations, though. Because the unit is more than 18k BTU, we needed an isolator switch and a certificate of compliance; the estate manager had to check the position of the external condenser, which had to be installed in the utility yard, out of sight. Finally got the approval to go ahead, and the total cost ended up way more than I expected. Fortuntely my sister-in-law and I each own 50 per cent, so we are sharing costs.

The old island granite top we're replacing to match the rest of the kitchen cupboards is also being done this week. The painting of the entire apartment will be done this week, in my absence.

What started as a day of easy cheesy bakes ended on a big scare - thought I was having a seizure, but it's not so! A very rare spigelium hernia was discovered after an ultrasound, so I'm off to the specialist on Monday. I am not allowed to drive till the periodic rocking and rolling stops. It seems there will be no other way except surgery. The surgeon is known to be very popular, conservative and not one to grab for the knife quickly.

Oh, and my final provisional tax for Lily's Cottage was finally submitted, my last provisional tax for Lily's Cottage, and then I'm done! I owed quite a tidy sum but had to close my eyes! My bank balance is not looking as good as I'd want it to! But it will build up as I just need to learn to budget!
