A nice meal of prawn noodle from Albert Street hawker stall

I tried another Prawn noodle stall in the Old Airport Road Food center and I customized it. This has made me think that I made a good decision. I got this version of the prawn noodle dish from the Albert Street Prawn Noodle stall.

It's a hawker stall that has a proven track record and a huge loyal customer base. That's probably the reason why the owner is shocked that I had the guts to customize my order. They may seem reluctant but they still accepted my order and then made me something that I liked.

I ordered the dry version.

Usually, they will separate the soup in another bowl together with the prawns & pork ribs. Then noodles will be mixed in either a chili paste or tomato sauce. Both options for the sauce are okay however I've been having gum issues recently so spicy food is not going to make it better. I didn't like the tomato sauce because it was sweet and it's not something that I would want to have in this particular dish.

My goal is for me to use the soup and drizzle it over the noodles. It allows me to formulate the level of taste and flavor that would suit my preference.

The pork ribs were perfectly tender. It may not be super tender but there's a good balance between the quality and there's also a nice chew to it.

I am happy with what I had for this dinner. The food was so good and the quality of the ingredients was good as well. I'm not sure how they managed it but S$6 is a good value for money. I'll be back soon :)
