THE PROCESS OF MAKING A TYPICAL NIGERIAN SCRAMBLED EGGS WITH CARROTS

Whether it is breakfast, lunch or dinner, scrambled eggs is a good option. Nigerian scrambled eggs are not only rich and full of life but they are very sumptuous (when they are well prepared). So, I'd be sharing the process of making a typical Nigerian scrambled eggs that I made in my house for my family. One unique thing about this recipe is the inclusion of carrots. There are different ways of making scrambled eggs - some people make theirs without adding any veggies, just spices and maybe onions. While some people like to garnish theirs with any ingredients of their choice such as sausage (hotdog), fish, minced meat, etc.
INGREDIENTS NEEDED
4 Eggs
Onions
Tomatoes
Scotch bonnet
Carrots
Vegetable oil
Salt
Seasoning cubes
Step by Step
First and foremost, we will prep all the ingredients that we will use. This will make the cooking process swift and easy.
Wash the scotch bonnet and tomatoes, and slice it into desired size.
Wash the the carrots and onions. Grate them with a grater or you can slice them as well. But in my case I used my grater because I love the texture it provides inside meals.
Next, wash your eggs carefully and crack them into a bowl. Whisk until every part of the egg is mixed together.
In a frying pan, add some vegetable oil and allow to heat up
Add the grated onions first and sauté.
After it has been well sautéed add the tomatoes next and then the scotch bonnet. Leave for about 2 to 3 minutes until it's done.
Next, add the grated carrots and stir fry for another 3 minutes.
Add your seasoning cubes and some salt at this point. Allow to cook as your stir at intervals.
Now add the eggs that you have whisked into the frying pan.
Remember this important step. Let the eggs sit gently on the frying pan for about 2 minutes before you stir.
After the first 2 minutes you can stir occasionally until it is done.
Your Nigerian Scrambled Eggs is Ready.
I served the scrambled eggs with some bread. This kind of egg can be served with boiled/fried/roasted yam/plantain/potatoes etc.
