Smoking Hot: My Delicious Journey to Perfect Spicy Homemade Barbecue Fish

I was craving fish barbecue, so I put a call to one of my customer who has a fish pond where she rears catfish to ask if they are available for sale. Thankfully, she just harvested few days back and had some that she reserved. I quickly head over to her house where the fish ponds were located and I was able to buy 2kg. She sold each kg at #3600 ($2.40).
The fish were huge - a sign that they were well fed. I prefer buying directly from the farm rather than buying from the market. I always get a good value for my money when i buy from the direct seller.
So, let me take you through the process of making my fish barbecue. I added some sweet potatoes to my barbecue. Some may prefer to use plantain, irish potatoes or other accompaniment of choice.
INGREDIENTS
- 2 Large Catfish
- 1 meduim onion
- 1 medium tomatoes
- About 4 scotch bonnet and bell pepper
- 1 tsp multipurpose
- 1 tsp suya pepper
- 1 tbsp curry powder
- 2 seasoning cubes
- 1 big sweet potatoes
- Β½ cup of Vegetable oil
- Salt to taste
HOW TO PREPARE
- Wash your fish thoroughly until it is very clean
- Make incisions on the sides of the fish so that your seasoning can go inside well. Set aside.
- Wash your tomatoes, onions and scotch bonnet/bell pepper. Slice the onions and roughly pound the tomatoes and scotch bonnet/bell pepper together. Set aside
- Wash, peel and dice your sweet potatoes into desired size. Set aside.
- Next, place the fish pn a foil paper. Use a glove to rub the mixture all over the fish and inside the incisions that you cut earlier
- Then add the sweet potatoes that you have diced as well
- Use the vegetable oil to rub the fish round
- Gently wrap the foil paper and move to your grilling tray. Move the tray to the preheated oven
- Leave to cook for about 45 minutes to 1 hour
- Once it's done, serve with more onions or other accompaniment of your choice.
