HOW TO COOK EXQUISITE, NUTRITIOUS & SPICY NIGERIAN JOLLOF SPAGHETTI

Spaghetti is one meal I do not get tired of no matter how many times I eat it either as breakfast, lunch or dinner. Whether it is spaghetti with sauce, jollof spaghetti or the stir fried spag, it is always a banger. More importantly, it is quite fast to cook and it is just the best meal you can have when you prepare it in the right way.

Growing up, especially in the University, spaghetti is my go-to meal that saves me during the days that im broke or when I don't have luxury of time to cook. The starter pack for a student spaghetti meal is a sachet of tomato paste, eggs and grounded pepper. Writing about this brings back so much memories of how I prepare my pot of spaghetti in the corner of my room in the school.

But today we will be talking about how I prepared an Exquisite Nigeria Jollof Spaghetti that is suitable for any meal of the day. I case you want to try out this recipe you may add some other ingredients like sausage, fish/sardine, shrimps etc. Also, in my recipe I boiled my eggs, you may decide to scramble or omelette yours.

Ingredients

  • Spaghetti

  • Fresh tomatoes

  • Scotch bonnet

  • Onions

  • Green peas

  • Green beans

  • Seasoning cubes

  • Salt

  • Vegetable oil

  • Egg

Step by Step

  • We will start by prepping all the ingredients to make the cooking process seamless.

  • Wash the scotch bonnet, carrot, green beans, tomatoes and onions. Slice into your desired size and set aside.

  • Wash the green peas and set aside as well.

  • Place your pot on medium heat, add some salt and leave to boil.

  • When the water is boiled, add the spaghetti and allow to cook until it is almost done.

  • The next thing to do is to drain the water and set aside.

  • Place your frying pan on meduim heat and add some vegetable oil.

  • Now, add the sliced onions and saute for about 60 seconds. 1000110631.jpg

  • Next we will add the scotch bonnet and stir fry for another 1 minute.

  • Then we will add the sliced tomatoes and stir fry for another 8 to 10 minutes.

  • Add the carrots, green beans and peas at this point and let it cook on low heat for about 5 minutes. Ensure you stir at intervals to prevent it from burning.

  • Add your seasoning cubes and salt to taste.1000110633.jpg

  • The next step is to mix the spaghetti that you set aside earlier with the sauce you just made.

  • Ensure you thoroughly mix it so that each strand of spaghetti will be rubbed in the sauce. This can be achieved by mixing in a gradual process.

  • You can cover the pot at this point so that it will simmer and make the ingredients enter the spaghetti well.
  • Meanwhile, in a seperate pot you should have been boiling your eggs. 1000110635.jpg
  • Food is ready.
  • Serve your exquisite spaghetti with the eggs.

Whoa, your spaghetti is very different from Filipino spaghetti. You put egg in your spaghetti? That's really unique, well, I find it unique coz its different from hours. I'm curious though how would this taste 🤤🤤🤩

Yes, we put eggs in our spaghetti. You can choose to boil or fry the eggs. It depends on your preference. It tastes really good. You may want to try the recipe one of these days 😉.
