Kikil, this is the name for a food ingredient taken from cow skin, then dried to be used as a main dish. Cowhide which is made into kikil, not dried should be used as material for shoes, bags or leather, however, kikil is only dried in the sun for a short time. Kikil also comes from cowhide which is on the legs, so the skin is softer and chewier.

Kikil is a cheap food alternative to enjoy beef, where the price of kikil is much cheaper than beef, so that kikil is in great demand by many people, especially in Asia. Processing kikil is also very simple, unlike cooking beef which is prone to damage when cooked.

I know Kikil very well, because my mother really likes to cook Kikil. Almost every week we were served kikil dishes, because at that time our family's economy was still very difficult, of course it was very difficult to eat meat, so my mother always gave cheap animal protein such as eggs, chicken and kikil.

The Recipe


To make stir fry kikil tauco, there are several ingredients that will be used, apart from that, always follow step by step in making stir fry kikil tauco, use quality ingredients, Hivers!


Ingredients;

  • 300 grams of kikil
  • 80 gr green chilies, 20 gr cayenne pepper
  • 4 cloves of garlic and 4 cloves of shallots
  • 50 gr of tauco
  • 2 pcs candlenuts
  • 1 pcs tomatoes
  • Lemongrass, lime leaves, ginger and galangal
  • Salt and sugar for flavoring

How to make stir fry kikil tauco;

  • Clean the kikil with hot water, then cut according to taste.

  • Thinly sliced green chilies, tomatoes. Cut the ginger and galangal, wash the lemon grass and lime leaves with clean water.

  • Grind the cayenne pepper, shallots, garlic and candlenuts, then stir-fry with a little vegetable oil until it releases aromatics.

  • Add ginger, lemongrass, galangal and lime leaves. Then add sliced green chilies and tomatoes, cook until the chilies are slightly wilted.

  • Put the cut kikil into the wok pan, cook for 5 minutes. Give tauco, sugar and salt, adjust to taste.

This is very delicious. In the Philippines, we called it balbacua. The same procedure is done.

This is one of my husband's fave and mine too especially when it is hot and spicy. During special occasions here, this dish is present because it is so tasty.

Lovely dish! Kikil is known as Pomo in West Africa. Heheh I eat this alot, usually prefer to serve mine to rice. Well written recipe! Thank you for sharing it with us. BTW, beautiful pictures!

Cowskin is called kikil? Well I just learned something new today because we have a completely different name for it where I come from. I love your dish by the way, it's look easy to make but I may be wrong though 😅.
