Do you have a food you miss? For example, when you are young and have interesting snacks that are hard to find nowadays, so that you miss the taste of snacks and want this food to be eaten now. Well, I have one snack that suddenly appeared and I really want to eat it.

Today's mood brings me back to work in the kitchen, making interesting dishes that my family will surely love. Back to childhood that made me remember the delicious taste of coconut bread. When I was little, I loved buying coconut bread at a bakery shop near my school. Every morning my mother likes to buy 1 piece of bread with coconut filling and serve it as a lunch to eat during recess.

I still remember that bakery shop, named MAYESTIK bakery, now this bakery shop is very rare, maybe it has gone bankrupt or an acquisition, because this bakery is a big bakery shop in my city. There are so many types of bread that are sold, but indeed I only like coconut bread because of its practical shape to serve as lunch.

Previously sold at a price of 500 rupiah, the bread has a soft texture and also has a lot of filling. Every day the bread is made and very fresh from the oven, in fact I often get bread that is still warm. You know the taste of warm bread is very delicious and fragrant? Well, that's what I really like.

Actually this bread is very simple, not the type of bread that is difficult to make, so anyone can make it. Well, this time I want to share a recipe for making coconut bread. With an easy and economical recipe of course. I learned how to make bread in the last few months, using youtube information with a lot of trial and error. Not only that, I also added some techniques to suit my taste.

Jadoel Coconut Bread Recipe

Ingredients;

  • 255 gr high protein flour (bread flour)
  • 30 gr + 50 gr sugar
  • 1 egg
  • 4 grams of instant yeast
  • 115 liquid milk / water
  • 50 gr butter
  • Pinch of salt
  • 200 gr grated coconut


*How to make Jadoel Coconut Bread;

  • Sift flour and mix with 30 g of sugar along with instant yeast. Stir the dry ingredients to mix well.

  • Then add 1 egg then mix with a mixer.

  • Add the liquid milk slowly, so that the dough is not too wet and quickly becomes smooth.

  • After 5 minutes in the mixer, add the butter and salt, then mix until elastic. It is mandatory to be elastic, yes, so that the bread is soft and expands well.

  • Make coconut filling : Steam the grated coconut and add 50 grams of sugar, steam for 15 minutes.

  • After the dough is finished in the mixer, let stand for 45 minutes, cover with a clean cloth so that no dust enters the dough and accelerates the dough to rise perfectly.

  • After proofing, roll out the dough with a rolling pin to deflate the air. Shape the bread according to taste while filling the dough with grated coconut.

  • After that, rest the dough to expand. Resting for 30-45 minutes, at least the dough rises 2 times larger.

  • Preheat the oven to 180 degrees Celsius, for 30 minutes.
  • Put the dough in the oven and bake for 25-30 minutes.

I also love coconut bread. I normally purchase one whenever I am returning home from school unfortunately I can't remember the eateries name but it's soo yummy. I use to think making bread was hard and never thought to try it but you made this tutorial look soo easy. Thanks for sharing.
