[Healthy Bento] Roasted Potatoes With Shrimp And Broccoli
Welcome again to my healthy bento recipe version. This type of blogging is of course part of my daily life. Prepared meals with balanced nutrition for my husband.
Preparing bento to eat at my husband's work is all about thinking about what my husband likes. Although sometimes, preparing it is very time-consuming. It doesn't matter as long as my husband is happy.
Shrimp is my husband's favorite seafood. Meanwhile, I don't like it. Moreover, how to prepare shrimp for cooking is not easy, quite time-consuming, and troublesome, especially for shrimp of medium to large sizes.
There is no doubt about shrimp nutrition. Especially if for the diet menu. Shrimp has a high protein content but low fat. That is why shrimp can be served as a variation of a diet menu to be combined with various vegetables and carbohydrates.
Well, my husband and I are on a weight-loss diet. Shrimp are a great alternative to our menu. Although, we mostly consume plant-based protein.
When my husband asked me to make a bento with shrimp ingredients, I smiled and said yes to his request. So, I have to work extra in the kitchen for that request. I'm just happy to obey what he wants to make me happy. I feel like I'm addicted to cooking for the people I love.
Some people say they don't clean the shrimp while cooking. What I mean is they don't remove the dirt of the shrimp nor do they remove the shells of the shrimp. Maybe if you make a fried shrimp menu, that's not a problem. But if you make another dish like stir-fried shrimp, I think it will be impossible. I couldn't see the shrimp I cooked still had the skin on there.
How bothersome to clean the shrimp has been ringing in my mind. But that is a challenge in the world of cooking. I gladly accept the challenge! Do you also have that annoying feeling when cleaning shrimp?
For vegetables, I choose vegetables that will fit nicely with the shrimp so I can save time on them. So, for the green veggie element, I chose broccoli. Later, I just need to blanch the broccoli before mixing it with the shrimp.
THE INGREDIENTS
- 1/2 kg of shrimp
- 1 medium head of broccoli
- 1 big potato
- raw green leaves (here, I use lettuce)
spices and herbs
- 2 tablespoons mixed of chopped red onion and garlic
- 2 tablespoons of oyster sauce
- 2 thumb sizes of ginger, flattened
- 1/2 teaspoon of salt for seasoning
- 1 tablespoon of salt to blanch broccoli
Cooking Instructions
STEP 1
Clean the shrimp. I buy and clean shrimp at night. Because I have to cook early in the morning. So, after I clean the shrimp, remove the skin and remove their dirt, I wash them thoroughly.
Once the shrimp are clean, I store them in the freezer in an airtight container. Also, I include slices of lemon in it to prevent the shrimp from having a bad smell.
STEP 2
Prepare the potatoes to be roasted. I use an air fryer instead of an oven for more practical reasons. You can use the oven as well. Don't forget to preheat.
Cut according to taste. Can be in the form of photo wedges or potato cubes or even potato fries. It only needs to be adjusted to the shape of the bento so that all the ingredients can fit in the bento.
Once the potatoes were chopped I added pepper, salt, and coriander powder. Then, roast them until cooked.
STEP 3
While we are roasting potatoes, bring the water to a boil. Then add salt. And blanch broccoli for about five minutes. Then, drain the broccoli.
STEP 4
Heat a few tablespoons of cooking oil. Then stir-fry flattened ginger, chopped red onion, and garlic, also kaffir lime leaves. Keep stirring until they smell good.
STEP 5
Add broccoli and shrimp. Also, add oyster sauce, and salt. Also, add enough water to prevent them from burning. Cook until the shrimp are cooked.
Taste correction before lifting. If it's too salty, you can add a little water. If it's not salty according to your taste preference, you can add a little more salt but not more than 1/2 teaspoon of salt.
SERVING
It's time to serve all elements into a bento box. I filled the biggest portion with shrimp and broccoli. For the other two parts, I fill those parts with roasted potatoes and lettuces.
As a complement, I also make green juice from pakchoy and pineapple ingredients. The healthy bento package for my husband looks to have the same color, which is greenish yellow. Oh, that looks really healthy and delicious, right?
