Cooking Bitter Melon For My Mother-in-Law

Cooking for loved ones is a beautiful blessing.

A marriage relationship is not just about the union of two people. But also two families. Since my mother died after my marriage, now I only have my mother-in-law.

I often sleep at my mother-in-law's house and we also get along talking about women's things 😅. I also often cook her favorite foods because they are the same as my husband's favorite foods.

Like this time, my mother-in-law asked me to cook bitter melon. We have a stock of bitter melons from my aunt's garden. I don't mind that request at all.

Well, my mother-in-law also likes my husband who likes spicy food. And that's good because the spicy taste can help reduce the bitter taste of bitter melon.

Do you like bitter melon? Honestly, I think bitter melon is the bitterest vegetable! But still we can eat this as a side dish.

In the past, my late mother often lied to my brother and I that eating bitter melon could make us smart and we believed that. Good suggestion 🤣

Anyway, to cook bitter melon is super simple. We just need to boil them first then stir-fry with other ingredients for 5 minutes. But to prepare bitter melon before cooking it requires a little waiting time to reduce the bitter taste of the bitter melon.

Then, I will cook the spicy version because my mother-in-law likes spicy, just like my husband and of course, just like me! 😊

I will add tofu and eggs to divert the bitter taste of the bitter melon.




THE INGREDIENTS

  • 3 small of bitter melon
  • 2 eggs
  • 100-150 grams of tofu
  • Chili paste (it is made from garlic, red onion, red chili, and a tomato.)
  • 2 tablespoons chili sauce
  • 1/2 spoon salt and coriander powder

Preparing Bitter Melon

First, we have to remove the bitter melon seeds by cutting them in half horizontally. Then, scoop the seeds using a spoon to make the job easier.

Once the bitter melon is without seeds, slice them but not too thinly.

Then, prepare the salt. I used 3 tablespoons of salt for 3 small bitter melons.

Squeeze bitter melons with salt until they look juicy. Then wait about 15 minutes.

After 15 minutes, wash the bitter melons until you really don't feel the sap.

Then, boil in salt water for five minutes. Drain well.




Frying Tofu

Cut tofu into pieces. Make sure to dry them first to remove any remaining water. Well, tofu is always stored in water. So, we have to dry them before further cooking.

Then fry the tofu until golden brown. Drain well.




Cooking Eggs

Heat cooking oil. Then, add chili paste first. Then cook until they look like they have changed color.

Then, place the chili paste on the edge of the pan. Add eggs. Then scramble the eggs until cooked.




Adding Boiled Bitter Melon and Tofu

Add fried tofu and boiled bitter melon after eggs are scrambled. Also, add chili sauce, coriander powder and salt. Mix them all well. Keep stirring for a while, around 2-3 minutes, then remove them.

Spicy bitter melon is ready to be given to my mother-in-law using a glass bowl.❤️

The rest of the bitter melon was finished by my husband. Served with warm rice. Also, extra fried onions, my husband says.

In fact, I'm very happy that my mother-in-law doesn't complain about my cooking. It's fairly tricky. I really appreciate that this bitter vegetable is acceptable to my mother-in-law. There is no food left over and it is happiness for the person who cooks. ❤️

That is a new way to cook bitter melon with egg and tofu, my mother used to cook it only with egg. But it is not my favorite, too bitter for me. !LOLZ

I'm not a big fan of bitter gourd or bitter melon but I usually order it whenever I eat at a Teochew-style food place because they know how to dial down the bitterness of the taste. You pointed out many techniques on how to lessen the bitter taste, that's good knowledge, thanks for sharing 😅

I've never tried this recipe with tofu but I imagine that it's a good compliment to the dish in terms of nutrition and a little bit of creamy flavor?... yummy 😋

Like your mother used to say that bitter melon reduces the weight and is helping in decreasing fat, also my mother says that it's good for diabetic patient and also help not to be diabetic( she says this with an additional line that it is scientifically proved)
Although I haven't yet researched about it but we believe on her words as she is our mother and bitter melon is really a good dish but we don't eat it like a side dish 😆
