Azuki beans are not only for making Anko / あんこだけじゃない小豆の用途

In Japan, azuki beans are used to make red bean paste "Anko". We use them for azuki rice or cook with pumpkin, but what's more, you can also make brownies with them! And they are vegan, no weird ingredients, and, what's more, modest amount of sugar.

Today, my partner wanted to bring something sweet to a meeting. Then I made azuki brownies for the first time in a while.

I topped them with a mix of flower petals sent to me by a friend in Switzerland. No photoshop or other color correction. It was simply beautiful.

The recipe was on a promotional flyer a few years ago when a German organic brand started selling pressed azuki beans as a new product. I loved it because it was really convenient (I could skip the azuki cooking process!), but I don't see them anymore, probably because there was not much demand for them. But the recipe is still available on their website.

Luckily I am used to making Anko (azuki bean paste), so I make a low-sugar bean paste and use a blender to make it creamy and substitute it. Oats milk can be changed to soy milk or other plant based milk. By the way, you can also make it gluten-free by changing the flour to rice flour and using soy milk! Haha, I did a lot of experiment since I really liked it.

It's been a while since I searched for azuki bean recipes, and I found a recipe for azuki brownies even on a supermarket website. Vegan and vegetarians are booming ... I may find some interesting recipes 😊

日本では、小豆の用途はやっぱりあんこ。食事系だとお赤飯やいとこ煮を思い浮かべる人もいるかもしれませんが、なんとブラウニーも作れます!しかもビーガンで変な材料なし、さらに、甘さ控えめです。

今日、ミーティングに甘いものを持って行きたいと言うパートナーのリクエストで久しぶりに小豆のブラウニーを作りました。

スイスのお友達が送ってくれた地元で作られた花びらのミックスをトッピングしました。フォトショップなど色補正なしです。自分で言うのもなんですがきれいですね。

小豆を使ったブラウニーの作り方は、数年前にドイツのオーガニックブランドが小豆の押し豆を新商品として販売し始めた時の販促ちらしにのっていました。私はこの押し豆が便利で大好きだったのですが、あまり需要がなかったのか今は見かけません。でもレシピはまだインターネットにあります。

押し豆があると便利なのですが、あんこは作り慣れているので、砂糖控えめで粒餡を作って、ブレンダーでクリーミーにして代用しています。オーツミルクは豆乳に変えたりして大丈夫。ちなみに、粉を米粉に変えて豆乳を使うとグルテンフリーにもできますよ!

久しぶりに小豆のレシピを検索してみたら、スーパーのウェブサイトにもあずきブラウニーのレシピがあり、探してみるとおもしろいレシピがでてきそうです。

Are you sure that those flowers are edible if it is so they are really 一番 topping (I know a bit of Japanese). As well as I would like to see more images of the process ☺️.

They are edible. Good point about the number of images. As I was in a rush in a busy family Monday morning, I didn't have time to take photos.
