Warming the Soul: The Comfort of Chinese ABC Soup







Have you ever wondered why we call this dish "ABC Soup"? I hadn't really asked myself that question over a decade of cooking it, but a quick Google search shows that it's because of the Vitamin A, B, and C you get from the three core ingredients: carrots, potatoes, and tomatoes.
Soup is a part of our Chinese culture when it comes to lunch or dinner. It's something that is unavoidable in a Chinese family and you'll learn to make it one way or another from a young age.
To begin, cut all the ingredients into bite-size pieces and set them aside. We've added onion as an extra ingredient to enhance the flavor, but you could also add other ingredients such as ginger or chicken or pork based on your preferences.
Usually, we would just throw everything into the pressure cooker, add water, salt, and start cooking right away, as that's the easiest and fastest way to do it. However, for this recipe, we fry all the ingredients first with some minced garlic to bring out the flavors before putting them into the pressure cooker.
While we wait for the soup to be ready, we prepare a mixture of brown rice and Sarawak purple bario rice, brought back from Sarawak by @vaelriey, in the rice cooker. Once that's done, it's time for me to write my HIVE post (which is this).
After 30 minutes of waiting, lunch is served. My tummy is happy and warm, which brings back some good old memories at Steem Fest 3, Krakow together with @travelgirl and @rea. Good times 😊
