Long story short…

My wife has 2 sisters and one of them is currently in South Korea. She went there aboit half a year ago and now the other sister went on a visit. We were asked what do we want as a present from Korea, and our choice was clear. Our barista friend Misho told us that Korea and Japan both have some excellent coffee roasters… so well, we chose Coffee!

I had the special task to find a good coffee roasters in korea that is both good and has an online shop. I bet there are hundreds of good roasteries in Seoul, but we don’t have the opportunity to walk around and choose the best one.

After a relatively long search I found the Momos coffee roastery which was presented in various websites as one of the first and best coffee roasters in Korea. Their products were advertised as excellent and standart setting.

My choice was limited to two coffees. One of them was cheaper… actually they were both at the same price, but for different quantity.

The cheaper Natural Anaerobic Pink Bourbon coffee was about $17 for a bag of 200g. And although the other one was the same proce for 100g, this Natural Anaerobic sounded better than the simply Natural Geisha.

My first choice was the Anaerobic Natural which has this fine art on the label. I cannot understand much of it, except from the blue ostrich following a human in a weird forest. Anyway, it looks cool!

Here comes the first disappointment…

I cannot understand how roasters can deliver such dark roasted coffee to their customers. Maybe the customers in Korea like it this way… But when you have Coffee beans which were processed so delicate anaerobically you just cannot burn them this way and vanish a part of delicate aroma.

Well, to be honest, apart from the burnt charcoal there was some incredibly fine aroma of fermented fruits, passion fruit and other tropicals. Here I have to mention, that in the website there was written that this coffee tastes like Fashion fruit… well, on the label is Passion fruit… I guess someone skipped the english classes in school. 😁

My initial choice was to brew filter coffee, but it ended quite terribly. It had some nice vibes, but overly botter taste was just killing the experience. Say no more… I decided this taste was only gonna fit the espresso brewer. So here we are!

I am quite lucky to have the ability of changing the brew temperature of my Delonghi espresso machine. Such dark roasted coffee requires low temperatures. Otherwise you will extract more of these bitter notes.

A side note
You can understand that the coffee is excessively dark roasted when you see these oils on the surface of the coffee beans. This is not a very good sign…

With all the measures I took I have to say the coffee turned out relatively good, but it still had these bitter aftertaste. I definitely think that if it was a bit ligter roasted, just a lottle bit lighter, it would taste a lot better. These fine fruit flavors would shine on another level and the coffee would be brilliant. Now I can rate it only as okay…

Fashion Fruit 🤣 OMG! Even at our local roaster I’ve seen them roasting coffees dark. A lot of locals love the aroma and strong flavour. Although such beautifully fermented coffees are always best roasted medium. But that’s just my personal preference 👩🏻‍🌾

A friend of mine was recently visiting Japan. It is the same there, they have a lot of dark roasted beans around. I guess the people
In Asia ate used to darker roasts generally and like the taste. The roaster in Bulgaria where I get my coffee from usually roasts his beans medium - medium light, and most of the pricier coffees are light roasted. These are generally the beans that I prefer on filter. Medium light roasted coffees I consume on espresso.

Ooh thank you for this insight. I also don't like dark roasted coffee, so that's good to know. I have tried some as espresso with my moka pot, but it's hit or miss.

Dark roast is just so hard to me… It will definitely cover some flaws of the taste, but it covers the heavenly aroma of nose and expensive specialty coffees.
