Fungi Friday. The first porcini mushrooms!

| Hi friends! I'm finally excited to share some joyful news with you: last Monday, I found the first porcini mushrooms of this mushroom season! Why is this such a big deal for me? Because porcini are my absolute favorite — they're delicious, aromatic, need almost no prep, and make amazing dishes every time. The young ones are perfect for pickling, while the older ones I dry and later use for a rich, flavorful mushroom sauce. I love frying and stewing them — in short, they’re the number one mushroom in our family. I had already seen posts in mushroom-foraging groups saying porcini were popping up in some areas a month ago, but not yet in our region. So when I finally saw signs that they were being found nearby, I decided to check one of my trusted spots. I cleverly combined this with a walk with my little son Maksym: he fell asleep in the stroller, I left it at the edge of the forest where I could keep an eye on it — and dashed into the woods for just 10 minutes. And guess what? One porcini! Then another! Both beautiful, if slightly wormy (as is normal for summer), but definitely good enough to bring home and cook. Unfortunately, I didn’t have time to search longer — Maksym woke up and started crying, so the mushroom hunt had to end (after that, I only found a snail 😉). | Привіт, друзі! Нарешті можу поділитися з вами радісною новиною: минулого понеділка я знайшов перші білі гриби цього грибного сезону! Чому це для мене така велика радість? Бо білий гриб — мій улюблений. Він смачний, запашний, не потребує довгої обробки, і з нього завжди виходять неймовірні страви! Молоденькі білі — ідеальні для маринування, старші — сушу і потім готую з них ароматну грибну підливу. Обожнюю їх смажити, тушкувати — коротше кажучи, це гриб №1 у нашій родині. Раніше я вже читав у грибних групах, що десь уже знаходили білі — ще місяць тому, але в наших краях їх ще не було. І от коли почали з'являтися перші звістки, що вже й тут трапляються — я вирішив перевірити своє грибне місце. І зробив це практично: поєднав з прогулянкою з моїм молодшим сином Максимом. Він заснув у візочку, я залишив його на краю лісу в полі зору — й заскочив у хащі буквально на 10 хвилин.І що ви думаєте? Перший білий гриб! Потім другий! Обидва — гарненькі, хоч і трішки червиві (що нормально для літа). Але досить добрі, щоб узяти додому і приготувати. На жаль, часу шукати більше не було — Максим прокинувся, заплакав, тож довелося згортати грибне полювання і вертатись додому (я знайшов лише равлика після цього 😉). |

Tomorrow, I’m heading out with friends for some serious mushroom hunting in my favorite spot in the Staryi Sambir district. Hopefully, we’ll find more mushrooms — and I’ll have something new to share with you 😉 | На цьому фото — два молодих білі грибочки, які я знайшов 😊 Ми їх вже з’їли — додали до кабачкових оладок, вийшло дуже смачно!
