Time for the Green Gold: olive oil!
In the last 3 months of the year, the olive harvest takes place from which, through a mechanized process, olive oil will be obtained, today also called green gold due to its high costs. In fact, oil has undergone a surge in prices in recent years, going from lows of around 4 euros to 10 euros per litre, in some territories the product is sold at much higher prices.
The olive harvesting process was once done manually: men with wooden mallets beat against the branches, letting the olives fall onto the nets placed at the foot of the tree. Today there are machines equipped with movable nets and arms that wrap the tree and shake it, stimulating the fall of the olives. The use of machinery reduces harvesting times, but the costs of purchasing and maintaining the machinery often do not contribute to reducing the price. Indeed, unbalanced machinery can also cause damage to the plant, affecting flowering in subsequent years.
After harvesting the olives, we took the harvest to the oil mill, the site specialized in processing olives and producing extra virgin olive oil. After carrying out the weighing, we unloaded the olives while waiting for the employee to proceed with the collection and sorting into the appropriate container from which a conveyor belt begins its journey towards different processing processes: separation of the branches from the olives, pressing and centrifuging ( useful for separating oil from water and other waste substances).
At the end of the chain (the process lasts about two hours from the moment the first olives enter the machine until the final result), the oil comes out of the final tap, an intense green liquid, fragrant and it is almost possible to perceive its flavour.
The background, however, is very noisy because the entire machinery, technologically advanced instruments, emits many mechanical sounds, alternated by the escape of air through some vents. Music for someone, a lot of noise for someone else.
In reality it is impossible to work full time with the incessant and deafening noise of the machines, so the workers wear appropriate hearing protection devices, insulating headphones. Satisfaction after a long day of work blossoms only when that precious green liquid gushes from the fountain.

Negli ultimi 3 mesi dell'anno, avviene la raccolta delle olive dalla quale si otterrà, attraverso un processo meccanizzato, l'olio d'oliva, oggi definito anche l'oro verde a causa dei suoi costi elevati. Infatti, l'olio ha subito un'impennata dei prezzi negli ultimi da anni passando da minimi di circa 4 euro ai 10 euro per litro, in alcuni territori il prodotto è venduto a prezzi molto più alti.
Il processo di raccolta delle olive un tempo avveniva manualmente: uomini con mazze di legno battevano contro i rami, lasciando cadere le olive sulle reti poste ai piedi dell'albero. Oggi ci sono macchinari dotati di reti movibili e braccia che avvolgono l'albero e lo scuotono, stimolando la caduta delle olive. L'uso dei macchinari abbatte le tempistiche di raccolta, ma i costi per l'acquisto e la manutenzione del macchinario spesso non contribuiscono ad abbattere il prezzo. Anzi, macchinari non equilibrati possono anche provocare danni alla pianta, ineficiando la fioritura degli anni successivi.
Dopo aver raccolto le olive, abbiamo portato il raccolto nel frantoio, il sito specializzato nella lavorazione delle olive e produzione di olio extravergine d'oliva. Dopo aver effettuato la pesata, abbiamo scaricato le olive in attesa che l'addetto procedesse alla raccolta e smistamento nell'apposito contenitore da cui un nastro trasportatore inizia il suo cammino verso diversi processi di lavorazione: separazione delle frasche dalle olive, premitura e centrifuga (utile per separare l'olio dall'acqua ed altre sostanze di scarto).
Alla fine della catena (il processo dura circa due ore dal momento in cui le prime olive entrano nel macchinario fino al risultato finale), dal rubinetto finale ecco fuoriuscire l'olio, un liquido verde intenso, profumato e quasi è possibile percepirne il sapore.
Il sottofondo però è molto rumoroso perché l'intero macchinario, strumenti tecnologicamente avanzati, emette molti suoni meccanici, alternati dalla fuoriscite di aria attraverso alcuni sfiatatoi. Una musica per qualcuno, un grande baccano per qualcun altro.
In realtà è impossibile lavorare a tempo pieno con l'incessante e assordante rumore delle macchine, per cui gli operai indossano appropriati strumenti di difesa dell'udito, cuffie isolanti. La soddisfazione dopo lunga giornata di lavoro sboccia solo quando quel prezioso liquido verde zampilla dalla fontana.

It's true, it's one of the most expensive oils, but it's worth every penny.
