Summer Reflection #21: Candy Day

We invited the friends we spent July the 4th with for a barbecue, over for tortilla wraps and tacos. And then, Smallsteps and I decided we would make a pavlova together, because she wanted to learn. Pavlovas are the easiest and most delicious cake there is in the summer, with fresh strawberries, blueberries and whipped cream.

We will decorate it later.

The only thing to really be precise about, is to ensure there is no oil residue in the mixing bowl and no egg yolk gets into the whites when separating, otherwise the mixture won't firm up into peaks, and the pavlova will suck.

Nine whites.

One of the egg yolks broken when I was separating them, so I had to give that one up. It is because of this that I am careful to separate into a different bowl completely, which also means that if an egg is bad (very rare here at least), it doesn't mix with the others. So, whites into one bowl that gets emptied into the mixing bowl after each separation, and yolks into another bowl for later.

I made this mixture a little different to what I normally do, with a little more corn flour to see if I can get it to cook and stay higher, without spreading and dropping too much in the oven. I suspect it will drop anyway, but I might as well try. I will let it cool in the oven so it doesn't cool too fast and deflate completely, but I have never been able to get it to stay very high.

Smallsteps helped me with the measurements and did a little of the mixing, but mostly we were just talking and she asked questions about why I was doing this or that. The whole process of prepping before oven only takes about twenty minutes or so, and with hardly any ingredients, it really is a simple process.

It was very thick today, so hopefully it stays high.

In the past, I had no idea what to do with all the egg yolks, so I would just throw them away. I knew a custard was possible, but I thought it would be some difficult process that I would screw up. However, the last time I made a pavlova I decided to try an easy recipe and it came out surprisingly good and once it had cooled, was just as good (if not better) than a store bought vanilla custard for pies.

So now, my wife is going to make a pie as well.

Suffice today, that while the dinner might be relatively healthy, the dessert is going to put a dent in anyone's diet, so I am going to have to hit the gym a bit harder the next few days. In Finland, Friday is traditionally "candy day" for children, where they might go and get a small selection from the store for the weekend. I never had this as a child, and we don't do it for Smallsteps either, because we think that it makes junk food a reward or something special and rare, rather than something that we can choose to have sometimes, but is not expected, or entitled.

So far, it has worked.

No, just another day.

It is good that you can cook. I am not allowed near anything but the grill. So cool that Smallsteps enjoys doing stuff like that with you.

I never eat candy bars, and as for candy, I eat that very rarely except for organic dark chocolate items. After years of not eating that crap, it no longer tastes good to me. Take M and M's for instance. I used to love them as a child but now they taste awful to me. I wonder if the flavor has changed? And with each bite I have this tiny thought "you are eating poison right now" that takes any joy right outta me.

So how did your Pavlova turn out? I used to make this. But the only ingredients were sugar, egg whites and a pinch of salt I think. I'd beat the whites with the salt in a mixer until they started to make soft peaks, then add the sugar very slowly, I think until the mixer started to spit, then fold the remaining sugar in gently. Something like that. It's been a good thirty years or more.

Look at smallsteps doing a great job hahahaha. She's already getting so good with cooking thanks to you brother. The extra corn flour trick is pretty interesting, I hope the pavlova turned out well.

East Asians like me have never tried Pavlovas, so I'm curious about what it tastes like!

Is it candy day for you too?

Ice cream day here. I can barely cook anything( other than using a grill). But at times I watch australian(?) cooking show My kitchen rules.Most of the time I don't care what they are cooking but seeing how people scheme to be in higher position is quite interesting.A bit like watching/ reading people plotting in Game of thrones/ Berserk.

No such thing as candy day here either, as children growing up it was a treat, as was licking the spoon or bowl when baking in the kitchen..., only for the helper !LOLZ

One thing my sister makes exceptionally well, my efforts always flopped, great you have mastered the art, it must taste divine with fresh berries prepared.

Two 🍺 🍺 beers with my Blackened Chikums Sammich. Bacon and Cheese too of course. After all this is Candy Fry Day. The wife and I treat ourselves when we can both get together on her early out end of the work week day. Lunch at 🌶️ Chili's Pub 🌶️

Note to self..: Beer 🍻 should never be a reward for anything 😳

That is a good bonding experience, and maybe she'll learn to love cooking. I never did this a kid, so maybe that's why I don't like cooking. With your wife making pie, that is a lot of sweets and calories. Maybe just think of it as a cheat day haha

Your girl is so beautiful, and she helps you prepare dessert; That's the best way to share time.

And don't worry about dessert; If you consume it at the right time, it has no consequences.

I still do this as an adult. Maybe too much!

These days it is ice cream week and not so much candy day. My waistline is definitely paying the price. Had to buy 2 new pairs of shorts for the season since I could not reasonably get into the ones from Europe last spring. Yikes!

Maybe less ice cream and a few more steps. I can already hear actifit calling in the background.
