Breakfast with fresh ingredients from the garden

What the heck is that? Fair question. It was my egg sandwich today for breakfast.

I usually cook three eggs from the local egg farm for breakfast. Nice to practice the "know where your food comes from" principle when possible 😉

Brought in a jalapeno pepper from the garden and we have some garlic harvested earlier this summer.

I always start toasting the bread while cooking. Two sesame bagels today. I wish I has some good local bagels but these are sadly grocery store bagels.

First step is coating the pan with butter while also sauteing the garlic and some previously not pictured onions but they are also from the garden.

I add in the eggs and fold the onion and garlic over onto the eggs.

We keep some basil in the kitchen in water this time of year. Also from garden.

I usually add the basil to the eggs but it would probably be better added to the tomatoes on the sandwich at the end.

The bagels are toasted. I usually add butter because hey I'm not getting any younger, might was well eat tasty food.

Sometimes the eggs fit nicely on the bread, sometimes I trim them to fit.

Then I sliced some fresh tomatoes from the garden and added the sliced peppers on top. Nice colors. I like spicy food and the garlic plus onions plus fresh peppers gave this sandwich some kick. Later this summer my wife will start making salsa with basically these ingredients. I love her salsa over my eggs and its like a super easy shortcut to this recipe 😆

This breakfast really looks very simple, yet tasty and healthy. In my opinion, lettuce, onion, and cucumber could also be used in it. :P

Thanks for the support 🙏 🙏 I think those would be good adds. The "cool" of the cucumber and lettuce would be good. Thats one of the reasons I like having tomatoes on the eggs which are hot from the pan is the tomato adds a cool element to the sandwich.

Thanks. It is sunny and gorgeous here. Nice breeze. I first came across the term locavore in British Columbia years ago. I like the idea.
