Palm wine tapping

Local preparation of palm wine. Chanced on a local palm wine tapper who shared the preparation of palm wine. It's been a while so pardon me for being vague.

The palm trees are pulled down, a hole carved into the trees and a small fire set in the hole. Containers are put under them for the liquid in the trees to drain out.


The barrels are used to prepare the liquid drawn from the palm tree. A fire is set under the first barrel to heat the liquid. The heat separates the water from the wine. The other two barrels are filled with cold water to cool the vapour from the first barrel. The vapour travels through the rods placed in the barrels. The vapour condenses into the last container. It's a cool procedure. The product is sweet until it ferments into alcohol.
