Eggplant and Tomato flavored Chutney



Friends, Happy Monday everyone.

Today is really beautiful and bright, no one will think that it is winter by looking at today's atmosphere. Because in winter there is fog around and the environment is very cold, whereas in today's environment there is no presence of those. This is happening because the environment is changing.

However, today I will share with you another beautiful recipe of my favourite, although I try to share with you regularly the popular and delicious vegan recipes of our country. Our region has many easy and tasty vegan recipes, which are traditionally quite popular in our region.

Today's recipe has only two main ingredients and that is eggplant and tomato. Especially in winter, these two vegetables are produced the most in our country, also because of the high production, the price of the vegetables is very low and because of this, everyone tries to taste the various recipes of these vegetables.

You also know that tomatoes and Eggplants have many types of nutrients, which are really important for maintaining our physical ability and health. So this is a great recipe for this season, hope you like it too.

What I have used is -

  • Eggplant - 350 grams
  • Tomato - one big size
  • 4 dry chillies
  • Coriander leaves 50 grams
  • Onion 1 big size
  • Garlic 1 medium size
  • Salt 1 teaspoon
  • Mustard oil 2 tsp.

Preparation phase-

First, I placed two eggplants, tomato and garlic on the stove and charred them well. Then I removed the upper skin of burnt eggplant and tomato.

Then I took burnt eggplant and tomato on a plate. Then I mixed it with chopped onion, burnt dry chili, garlic and salt.

Then add coriander leaves, mustard oil and mix well the rest of the ingredients except eggplant and tomato.

Then I mixed all the ingredients together well by hand and made the mash.

Just as many of us call it bharta, most people also cover it with the name chutney. We usually eat these chutneys with hot rice and try to enjoy them with the whole family on special days.

The biggest thing is that it is very sour and sweet, that is, you can taste both sweet and sour from here, which will make your lunch or dinner more delicious.

That's good to hear because I have never tried this type of step. But you gives me good idea to prepare differently eggplant plus tomatoe chutney. These spices enhance the tatse much sure. Thanks for nice vegan recipe.
