The Filipino’s Sweet Sticky Rice Cake called BIKO

Hello Hivers! How is everyone doing?

I’m craving for BIKO so I decided to make one just to satisfy my cravings. There are a lot of versions of making BIKO and I believe each one has its own unique and distinct taste or flavor. My version is very simple and anyone can actually make it at home.

First of all, you have to prepare the ingredients needed. Since there are only four of us at home, I just prepared ½ kg of glutinous rice, ¼ kg of sugar and 1 coconut fruit to produce coconut milk.

I just cooked my glutinous rice in a rice cooker for less than 5 minutes. On the other hand, I poured the coconut milk on the pan and put the pan on the stove.

I had to continuously stir the coconut milk until is boils. Pour the ¼ kg of brown sugar and keep stirring until it reaches into a golden brown.

When the coconut milk got dark brown in color, that was the time I put the cooked glutenous flour on the pan and mix them together until well combined.

And as simple as that you can now serve and enjoy the sweet sticky rice cake.
It’s very simple dish yet so yummy and delicious actually the kids love it too!
It is also a perfect partner for coffee in the morning!
