Recipe of The Day | Delicious Creamy Garlic Parsley Salmon With Mashed Potatoes

🤠😎It is the Lunar New Year holiday, or here in Malaysia, we refer to it as Happy Chinese New Year 2024. How has your holiday been so far? For me, I have filled my days with spending time with my family and trying out new cooking recipes that cross my mind. I remember one of my friends telling me, 'Let's be creative today; gather whatever raw materials we have in our kitchen, cook it, and see what unexpected flavors we can create.

😢Pity my wife, from now on she needs to be cautious about food that is less oily and cannot eat too much at one time. Since her eating portions are small, she needs to time her eating until it becomes her habit. I am trying to help by suggesting types of food suitable for her so that she won't feel bloated and can have quality food for her stomach. I hope the recipes I cook will suit her taste.

As for the kids, they are so excited simply because they can taste homemade food prepared by Daddy in the house. Secondly, my recipes are usually fancy to them and make them eat more, leaving them feeling satisfied. My kids are not too picky about food, but there are times they will demand other dishes than what I cook. Maybe they get bored when they always eat at home. Especially my son, he is one person who likes to eat sushi so much. He is also my food tester; if he says it's good, it is good. He has a good sense of taste. When he shows his thumbs up👍, you surely know it's about time to eat.

Ingredients:

  • Salmon bone (for flavor)
  • Salmon fillets 500gram
  • Potatoes 3 pcs
  • Butter 2 spoon
  • Milk
  • Garlic-Mince
  • Onion-Mince
  • Salt
  • Paprika
  • Fresh parsley- Mince

1- Prepare salmon: Season the salmon fillets with salt, paprika, and minced garlic. Place them in the air fryer basket along with the salmon bone.

2- Air fry salmon: Cook the salmon in the air fryer at 375°F (190°C) for about 10-12 minutes, or until cooked through. Adjust the time depending on the thickness of the fillets.

3- Make mashed potatoes: While the salmon is cooking, peel and chop the potatoes. Boil them until tender. Drain and mash them with butter, salt, and Milk until smooth and creamy.

4- Prepare sauce: In a saucepan, melt some butter over medium heat. Add chopped onion and minced garlic, sauté until softened. Stir in chopped parsley and Milk. Let it simmer until the sauce thickens slightly.

5- Serve: Serve the air-fried salmon with the creamy garlic parsley sauce drizzled over the top, alongside a generous portion of mashed potatoes. Enjoy your delicious meal cooked in the air fryer!
