Hello dear Foodies and Hivers!

In this post I am sharing a recipe with two main ingredients...and that is bell pepper + mushroom. It is so delish you won´t believe that it is so easy to make. The one that makes this dish so yummy are the simple spices that I added.

Yeah, they are the main ingredients that toppled some of my easy peasy dishes. I just happened to have bell peppers that were multicolored. I usually buy them in packs and they are sometimes imported from the Netherlands, Italy or Spain.

Pepper and Mushroom Delight

Serves 2

To make this dish we will need the following:

Ingredients:

3-4 Bell peppers- multi colored cut into strips
Mushrooms - sliced
Soy sauce
1/2 cup vegetable stock or 1/2 vegetable cube- dissolved in 1/2 cup water
Teriyaki sauce
Salt (optional)
ground black pepper
a dash of sugar or stevia (optional)
cooking oil

Can be bought in packs of 3 or 4 multicolored bell peppers.

Spices : black pepper, soy sauce, teriyaki sauce, button mushrooms

1/2 vegetable cube dissolved in water

Procedures:

1... Cut the bell peppers (deseeded) into strips

2... In a hot pan with 2 tablespoons vegetable oil, sauteé the bell peppers until golden brown in color.

3... Add the mushrooms and keep stirring until mushrooms get a brown color. Then add 1 tablespoon soy sauce, stir continuously. Add the dissolved vegetable stock/cube , stir again then cover the pan and simmer under low heat for about 5 minutes or until the peppers and the mushrooms become soft. When the liquid evaporates, add 1/2 cup of water, let boil. Then turn off the heat, add the 2 tablespoons of teriyaki sauce.

Taste and sample the finished dish, add salt and pepper according to your taste preference. (Remember: The soy sauce already contains salt, so be careful with adding it.) Lastly, add a dash of sugar if you want to have your dish taste a bit sweeter (optional). The teriyaki sauce I used is also kinda sweet , it's your choice to add the dash of sugar or not. I used 1/2 teaspoon stevia powder instead of sugar and I sprinkle it all over the dish.

So there you have the Bell Pepper and Mushroom Delight... It is scrumptious with only 2 main ingredients and the spices made this dish perfect. Serve hot with rice or just brown bread.

Wow! Must be delicious. I cooked bell peppers and mushroom when we stayed at Baguio before. But, only sautee, I hav'nt tried with teriyaki. I will your recipe hope I can find mushroom here in our mall.
