The Pergamino´s Coffee Are Considered The One!

I'll start by saying that Café Pergamino is one of my favorites in my short life.

Pergamino coffees were an experience that really surprised me with the clarity of their profiles and the distinct identity of each one. I tried three different varieties, and although they share that base of well-crafted Colombian coffee, each one tells a different story in the cup.

The first one I tried was a more classic, balanced, and smooth coffee. The aroma had sweet notes, like brown sugar and caramel, and when I tasted it, it had a very pleasant medium acidity, nothing aggressive. I liked it because it was an easy-to-drink coffee, ideal for the morning. It had medium body and a clean finish that left a slightly chocolatey sensation. It's the kind of coffee I could drink every day without getting tired of it.

The second was much more expressive and vibrant. From the first sip, I noticed fruity notes, something citrusy, it even reminded me of red berries. The acidity was brighter, but well balanced, which made it interesting without losing harmony. I felt that this coffee was meant to be enjoyed calmly, almost analyzing each sip. Its natural sweetness really stood out in the French press.

The third was the most intense of the three. It had more body and a deeper profile, with notes of dark cocoa and a more pronounced roasted touch. I liked it best for espresso, because it concentrated all its character in a small but powerful cup.

Overall, Pergamino's three coffees show care in the process and respect for the origin. There is a clear intention to highlight the work of the coffee grower and the diversity of Colombian profiles.

Empezare diciendo que Café Pergamino es uno de mis favoritos a lo largo de mi corta vida.

Los cafés de Pergamino fueron una experiencia que realmente me sorprendió por la claridad de sus perfiles y la identidad tan marcada que tiene cada uno. Probé tres variedades distintas y, aunque comparten esa base de café colombiano bien trabajado, cada uno cuenta una historia diferente en taza.

El primero que probé fue un café de perfil más clásico, equilibrado y suave. Desde el aroma se sentían notas dulces, como panela y caramelo, y al probarlo tenía una acidez media muy agradable, nada agresiva. Me gustó porque era un café fácil de tomar, ideal para la mañana. Tenía cuerpo medio y un final limpio que dejaba una sensación ligeramente achocolatada. Es el tipo de café que podría tomar todos los días sin cansarme.

El segundo fue mucho más expresivo y vibrante. Desde el primer sorbo se notaban notas frutales, algo cítrico, incluso me recordó a frutos rojos. La acidez era más brillante, pero bien balanceada, lo que lo hacía interesante sin perder armonía. Sentí que este café estaba pensado para disfrutarse con calma, casi analizando cada sorbo. En prensa francesa se destacó muchísimo su dulzura natural.

El tercero fue el más intenso de los tres. Tenía mayor cuerpo y un perfil más profundo, con notas a cacao oscuro y un toque tostado más marcado. Fue el que más me gustó para prepararlo en espresso, porque concentraba todo su carácter en una taza pequeña pero potente.

En general, los tres cafés de Pergamino muestran cuidado en el proceso y respeto por el origen. Se nota que hay una intención clara de resaltar el trabajo del caficultor y la diversidad de los perfiles colombianos.
