Stoneground Wholemeal Plait & Summer Salad

Binge-watching foodie series is bad news for someone who enjoys food, baking, and cooking; not sure which would be the correct order! My favourite shows currently are Masterchef and The Great British Bake-Off.

The theme 'Bread Week' sent my brain into overdrive; I wanted to bake, and eat everything, most of all spongy Devonshire Splits, but...that would have me overindulging as only two of us were at home. The guests checked out early Sunday morning and the neighbours were away.

Some things are best eaten on the same day, and a Devonshire Split is one of those!

What about soft spongy bread rolls? The same problem, they're not always soft and spongy the day after.

I settled on a healthier Stoneground Wholemeal and Chia Seed Bread but decided to use yogurt instead of water and add butter and an egg.
This would give the bread a more spongy texture, still crusty but easier to slice, or break the bread as with this three-strand plaited almost wreath loaf.

The big question was, did I have Yeast? I've been staying away from bread for a while now.
Yay, there was a sachet of Yeast in the pantry, and the Best-Before date was still way off!

I used Eureka Mills Wholemeal Flour, Stoneground flour - The Artisan's Choice since 1998.

Our whole meal flour is flavourful with nutty undertones. During the milling process the whole wheat kernel is ground together with the flour, so the fibre and texture of the bran and germ are in everything you bake with it.

I adapted my standard wholemeal bread recipe to make this loaf, and it turned out exactly as I described earlier with a manageable crust and spongy inside. The yogurt gave the bread a really nice flavour, while the flour produced a great nutty taste.

Ingredients:

The Recipe
  • 200ml Yogurt
  • 100ml Hot Water
  • 10ml Sugar
  • 7 grams Instant yeast
  • 50 grams Butter, melted
  • 1 Egg, beaten
  • 750ml Stoneground Wholemeal Flour
  • 5ml Salt
  • 100ml Chia Seeds
  • Extra 10ml Sugar

Beat yogurt, water, and sugar, and sprinkle yeast on top. Stir, cover, and leave for 10 min till yeast starts to froth.

Add egg and melted Butter, and beat to mix.
Mix dry ingredients together, make a well in the centre, pour liquids in, and knead by hand or electric mixer, using the dough hook.

The dough is ready when gluten strands become longer and the dough is smooth and elastic.

Form a ball, pat a little olive oil on top, cover, and leave in a warm place to proof till double in size.

Back to bread baking!

Knock risen dough down, shape into a long sausage on an oiled surface, flatten slightly, cut into three strands, and plait.

Carefully place into sprayed round baking pan, and shape into a kind of wreath.

Leave to rise, brush with e little melted butter, and bake in a fan oven at 170°C (or regular oven at 180°C) for approx 45 minutes

Remove from pan, and wrap in a tea towel. I placed Rosemary inside the tea towel which gave the bread a delicate flavour

The smell of hot bread baking in the oven made me miss my man again; it would always draw him into the kitchen. He'd often eat it as is, or with butter melting into the bread! I'd be scolding him as he'd lather the butter on - like I did here;)
I shared the loaf with my friend who Bonginkosi works for on a Monday, otherwise I'd be tempted to eat the whole loaf!

A Tuna salad was thrown together just before lunchtime with whatever I could lay my hands on for a quick lunch for Cynthia and me.

I am inspired to make this bread. I have vegan egg and everything else mostly. The braiding is so pretty.

I just had a salad and it did not look exciting like yours haha. .

It's strange to hear that summer is there. I keep forgetting that others have the opposite.

Hi Carolyn, it really cannot fail when your magical hands are kneading it😉 You could just use lukewarm water, but I'm sure vegan yogurt or even a milk replacement would give the same results. The bakers on the show were making cottage loaves and adding all kinds of fillings, from garlic, olives, cheese and more. It inspired me to get off the couch, although I seldom get the chance to binge watch TV!
I think of you when the sun comes out, the weather's been so miserable with cloudy rainy days. Only problem now is the mosquitoes, I'm trying all the remedies under the sun to chase them. The garden is so lush, we may have to spray some of the plants.

Yeah, reading your blogs can be bad news too on this front :P I'm constantly hungry after I read you. This looks super tasty (both the salad and the bread!). And super healthy, too. I'm not a big bread baker, but I'll definitely come back to this recipe when I do decide to give it a go! :D

Haha @honeydue, you sound like me yesterday, I wanted everything those bakers were baking.
Bread baking is so rewarding, that smell of it baking is divine!
I was craving all the divine bakes yesterday, choc mousse cakes, cheesecakes, etc, almost ordered ingredients for a cheesecake but behaved and made the salad instead!
I have to go for a wellness check for medical insurance as it activates additional benefits. I want to keep all the numbers looking good 😉

first I thank you for the recipe, the step by step, to make the Chia seed bread is great. besides the photos of tuna salad very provocative, but I'll tell you something the best photo for me that I really like bread, is the last photo of that piece of bread with butter, I swear I saw the picture and just provoked me to eat just that piece.

The story behind the Wonder Bag is quite an inspiration! I'll make this braided bread again, want to make a proper wreath. It would actually be nice for Christmas. Ummm, now I'm thinking, spices, sugar, raisins, cranberries, and even glace cherries :)

Beautifully done 🤤 that looks so good even it's color. The ingredients is not that hard to find too. The question is, can we make this as perfect as yours 🤤🤩🤩. I can eat this as breakfast or snack while sipping milk or coffee.

I smell Christmas and I can hear the bells ringing already.

The colourful salad you made gives that Christmas vibe and the plaited healthy bread looks like a wreath. 😍😍

I love how you used yoghurt instead of water, but I would like to know if it is sweetened or unsweetened yoghurt you used.

It's been a long time since I baked bread but visiting your post today has inspired me and I hope to bake bread soon. I'm looking forward to trying a new bread recipe and I will try adding yoghurt too.

The dedication to make something like this in an instant and have it tasted immediately and even finish it, shows how delicious it might have been in reality. 💯 I’ve binged watched the Five Start Kitchen series. Nothing beats it like the original panic reaction and creative recipes getting woven together.

Ohh that's an amazing recipe, looks very tasty, here I don't have chia but I could swap it for sesame. I love freshly baked bread 😋.... who doesn't, and this one even more 😋 The salad is very appetizing 😋 I loved the wonder bag, I didn't know it🤩. Best regards my dear @lizelle 💐🌻😘
