Seedy Date Bars

That title is kind of suggestive, right?

However, as you can see from the images, I'm not here to promote any pub of ill repute, where you can go to pick up a hot date!

These are seductive, delicious, and irresistible chewy cookie bars, made with plant butter, honey (substitute with maple syrup for a vegan treat), dates, oat flakes, coconut, brown sugar, pumpkin & chia seeds, and of course wheat flour. The raising agent is baking soda.

Oat Crunchies was an old-time favourite that Mom Lily often made when we were growing up, but it simply was Oat & Coconut Crunchies, no other trimmings added.

I had four brothers, and their friends used to come over to our home after school, not just to play rugby in the backyard, but also because Mom not only baked cookies, but also made her own bread. Thick slices of hot bread would be sliced and polished off in no time at all.
Mom always made two loaves and kept one for the family.

She was more prudent with the cookies so there would be limited left out for after-school treats.
Being the only girl, I was often spoilt with extra little treats, but that was a secret between Mom and me.

Being a stay-at-home Mom during our primary school years, money was scarce, but my Mom somehow knew how to make the most delicious meals with a pantry that was never full!

Back to today's Seedy Date Bars, here is the how-to, a very easy, and quick bake, and very moreish.
I keep on telling myself -

Just one more...

But these delicious chewy bars have seduced me, and keep on calling me:)

Seedy Date Bars
  • 250 gram Plant Butter
  • 150 ml Brown Sugar (the original recipe calls for 375ml, but I'm trying to cut down on sugar, so used more honey
  • 100ml Honey OR Maple Syrup for a vegan treat
  • 250 gram Dates, diced
  • 10ml Baking Soda (Bicarbonate of soda)
  • 500ml Cake Wheat Flour
  • 5ml Salt
  • 500ml Oat flakes
  • 500ml Coconut
  • 250ml Pumpkin & Chia Seeds (Sunflower Seeds are good, but I had none, any seeds or nuts in fact)

Melt plant butter, brown sugar, honey & dates and let it boil approx 2 min while stirring
Add baking soda & stir till mixture starts to bubble

Sift flour, add all remaining dry ingredients and seeds, and stir to mix well
Pour the melted ingredients over, and mix well

Press into a sprayed pan - approx 33 x 24cm

I've been thinking of baking some of these health bars for hubby to stop him from eating too many unhealthy snacks but he doesn't like seeds. Maybe I'll adapt your recipe and do some nut based ones, hopefully it will work.

I can tell you now that they will be even better with coarsely chopped pecan nuts, and real butter of course, but then butter is not so healthy of course! It is such an easy bake, and I was able to give the guests a little treat today. Let me know if you make it with nuts, just remember to cut it as soon as it comes out the oven before it hardens.
I'm sure your hubby will enjoy it.

Wow I love this preparation, I will save the recipe to make my bars soon, the dates here are expensive ... but I'll change them for what I have more at hand hahaha, thanks for sharing, excellent end result, the images are provocative

Hi @edwing357, you can make them without the dates, just add the extra sugar I mentioned from the original recipe.
Thanks for stopping by!

Oh dear, you need to go shopping! Oats (the flakes, not oatmeal, I need to specify that in the recipe😉) and Coconut, both are must-have ingredients in this recipe.
I'm also a sweet tooth but am trying to cut back on sugar hence the use of dates which is a healthy way of sweetening.

Oh my, this will be the death of me. I have been making so much caramel the last couple of weeks and burnt milk powder, and I think this will go so well with that. Or at least, I have been toying with the idea of dates and caramel for some reason.

This looks super healthy and yummy! Thanks so much for sharing.

No doubt these chewy bars keep on calling you. Oh, how delicious they look! I love dates and everything you added there 😋

The brief anecdote about your mother's care for you and your brothers during your school days touched my heart. It reminds me that though my mother did little or no baking, she did play dolls with me, and together, we sewed little dresses for them. I did make my kitchen a place where my son and his friends always wanted to come after school. Now he's a young man and since he lives in another country, he's learned to bake his own food.

Your recipes are always a delicious show ❤️

I'm so glad you enjoyed the little story about my childhood years.
Yes both my sons have left home and do their own cooking now.
Thank you for your kind words @marlyncabrera, enjoy the rest of the week <3

You have left me savoring those delights. I die for sweets. And what pleases me most is that you are now fully restored and making things in the kitchen very tasty. The memory of when you were a girl provides that everything looks good and reminds you of your mommy. Very nice. Thank you friend for sharing with us. Enjoy your sweets. Have a nice week.🥰🤗❤️🍰🎂🍩
