Fragrant Vegetable Curry

Glorious autumn days turned into an icy cold midwinter, literally overnight!

We live in a subtropical region known for its mild winters but sweltering and humid summers. I don't enjoy the humidity but don't do well in extreme cold either, most unusual for us!
I may consider visiting the children in the Netherlands for a longer period next year, during our winter, but not when it's winter in the Northern Hemisphere!

What I do enjoy about winter though, is the comfort food - curries, soup, pasta dishes, lentil cottage pie, hot puddings, and so forth.

I've been having issues with IBS and Reflux, but, I love a spicy curry, which is bad news for both those conditions.

Someone suggested substituting the Masala with Cayenne Pepper, which has many health benefits, as it may not cause adverse reactions. She was right, I've used Cayenne Pepper several times since then, obviously not gone overboard, and have not had any issues, despite conflicting opinions online.

One of the sites I trust is WEBMD, and this is what they say about the effects of the fiery Cayenne Pepper on digestive health:

It might seem ironic because you probably associate spicy foods with heartburn. But the capsaicin in cayenne pepper actually stimulates the nerves in your stomach that produce digestive fluids, which helps your digestion. Research shows it may even help prevent the most common type of stomach ulcers, which are caused by the H. pylori bacteria.

MEDICAL NEWS TODAY also gives a ton of health benefits, but warns that it may irritate the digestive system.

I believe what works for some, may not work for others!


Back to food, I will show you how I prepared a Fragrant Vegetable Curry, using Cayenne Pepper for that bite one expects when eating curry!

Ingredients:

I agree it's a whole lot, but you can omit or add your favourite vegetables or spices, plus it's ingredients one usually has in the pantry and the refrigerator.

Method:

Once vegetables are chopped, it does not take long and you'll have a fragrant, spicy curry, a deliciously warming meal, perfect for lunch or dinner on a cold winter's day. Serve with Basmati Rice or Roti.

The kitchen was filled with the aroma of aromatic spices, and my cell phone camera was bombarded by steam, as you can see from the photos.

Glad you enjoyed it, pity you can't get Cayenne pepper easily, but you can always use Masala, will need more than a teaspoon though!

That's what I admire so much as I understand the frustrations with power outages. One may get all the gadgets for backup power, but often there's no network cover.

What a treat that would be, having a meal with you my friend!
I hope it's warming up nicely in Montreal, winter's been slow in coming, but it's been very cold. You'll probably laugh when I tell you what temperature I consider cold - it averages 11°C in June/July, but I think it was lower this past weekend! It gets to minus figures in Johannesburg and many other parts of our country. I would not survive!

Haha it was 17C yesterday but today was 20 ish. It was too cold for me though. My boss wears shorts when it's 10C. Tomorrow is a hotter one.

Yes cayenne has healing properties, one can even get it in capsule form if you don't like hot spicy stuff
