Gelatos are a big deal for me when i'm in that neck of the woods...
Of course i took pictures of most (if not all) my Gelatos i got during the 6ish days i was in croatia... and yes i know there are more than 6 Gelatos... Don't worry about it!! haha

While other's at HiveFest focused on going to get drinks I scouted the best Gelato options of Split and since i don't and never have drank I focused on being a Gelato Connoisseur and it was amazing.

I know it looks similar but you can tell it was a different visit by the cup and the placement of the raspberry that i loved very much

The most expensive ones i got on that trip was at this Michelin Restaurant the last night... these were some of the desserts that included gelato/sorbet ice cream ... not actually sure the exact classification. Spoiler alert... they were good but give me a good ol fashion Gelato any day.

Looks like i ate 7 gelatos in 7 days... i think the only day I didn't have one was the morning i left... it's ok because i ate two on another day so final count was 7 for 7 if you're not counting the fancy dinner ones.

If I were to choose between gelato and liquor... I would go for gelato (even in the cold weather of Croatia) unless it's the rhum & raisins flavor, lol

I don't know why there are so many gelato places in Croatia, it was the same when I went to Dubrovnik after Split, but I think by the ones in Split are better. Is the last one pistachio?

Hubs and I had 3 each in each city, so I got to taste 12 all together

I love how that first one looks like you guys robbed the gelateria and are now making a swift getaway (not swift enough to not stop for a selfie, of course). :D

A lot of ice-cream when I went in Croatia I only have two 🤣 ice cream in rovinji was super expensive 🤣🤣

That “cool night shot” sure looked really good, it's an excellent photo of a gelatto lover in Europe! TOP!

Ah well, we must also keep in mind that those Italian colleagues of yours had the obligation to guide you on the right path hahaha.

Are there any Michelin star restaurants in Split that I missed, or is it just that they are listed in the guide? I remember looking before traveling and running out of options =/.

Omg, 🙀 how could I not join this legendary ice cream challenge, cause I'm literally a die-hard fan of ice cream. in all world I'll always choose ice cream from all desserts, my favorite - the ones that are put on with a spoon and pushed into a waffle cone. and that restaurant had a michelin star? and if you compare it with the street ones, restaurant's one was better?

🏛️ From Snow Cones to Sorbet: The Ancient Roots

Gelato didn’t just pop out of a freezer—it evolved over millennia. Long before refrigeration:

  • Ancient China (c. 2000 BCE): Mixed snow with milk, rice, and honey—proto-ice cream on the house.
  • Persia & Egypt: Served sharbat—a chilled fruit drink poured over snow—royalty-approved refreshment.
  • Rome, 1st century CE: Emperor Nero sent slaves up mountains to fetch snow, then doused it in honey and fruit juices. Talk about drama.

But this wasn’t gelato yet—just humanity’s eternal quest to chill its treats.

🎨 Renaissance Freeze: The Birth of Modern Gelato

Fast-forward to 16th-century Italy—where art, science, and dessert collided.

Enter Bernardo Buontalenti, Florentine Renaissance man (architect, engineer, artist… and accidental ice cream god). Around 1565, he whipped up a frozen concoction for the Medici court: milk, egg yolks, honey, wine, lemon, orange, and bergamot. It was served to Catherine de’ Medici, who later took the recipe to France—sparking a continental chill.

Some credit Cosimo Ruggeri, a Medici court astrologer-turned-confectioner, with inventing fior di latte (milk flower), the creamy ancestor of modern gelato. Either way—the Medici family were the original gelato influencers.

🍦 Parisian Pop-Up: Gelato Goes Global

In 1686, Sicilian Francesco Procopio dei Coltelli opened Café Procope in Paris—the first café in France—and served gelato to the masses. He even got a royal license from Louis XIV. Gelato officially went viral.

Procopio’s machine? A sealed pot surrounded by ice and salt—basically the world’s first gelato maker. Parisians lost their minds. The French revolution started with croissants… and gelato.

❄️ What Makes Gelato Gelato?

It’s not just “Italian ice cream.” Here’s why:

  • Less butterfat (6–9%) vs. American ice cream (14–18%)
  • Less air (35% overrun) vs. ice cream (up to 50%) = denser, silkier texture
