RE: Delicious as always. Baopak Boat Noodles

This looks delicious! The addition of cracklings reminds me of our local noodle dish called Batchoy, which is a favorite of mine. I even built a business around it at one time. The Bao Pak seems to use rice noodles, whereas I haven't seen a variation of Batchoy that uses anything other than the usual Miki (egg noodles).

I love the overlap of similarities and differences; it makes it easier to explore and adapt to the tastes of other cultures. This was an enjoyable read—thanks for sharing!
