Good morning, Hive-ians! 😊
It has been a hectic week, not a lot of pictures taken this week at all, completely forgot to even turn my phone on a couple of days, so photos are limited in this post, sorry, but we did have a lovely sunrise this morning that I wanted to share. 😊
We made a new-to-us acquisition at the end of this past year, to help us get through until we can save up for a new oven. It was this little Instant Vortex Plus and we’ve been using it every day since we were blessed to have it dropped off. We started off with a classic, chicken strips and tater tots. 😊
We were really excited when we saw it had a rotisserie inside it and our chicken and potatoes came out of it so tender on the inside and nice and crispy on the outside, yummy perfection. 😊
Even when we get a new stove, we’ll still be getting a lot of use out of our little Instant Vortex Plus, especially for snacks like these nachos, because they come out so nice and crispy and the cheese caramelizes so nicely in it. 😊
It’s been so cold outside that we’ve spent as little time as possible out in the elements and have been enjoying the warmth of our wood stove in the house instead while we try more and more things in our new kitchen gadget. We used the little pans that came with it to make our own version of “personal pan” pizzas, this was mine and it was fantastic. The crust was crisp on the bottom, soft and chewy in the middle and nicely caramelized on top, perfect pizza, in my opinion. 😊
In a few days of weather, we went from this winter wonderland. 😊
To this, almost spring-like weather, and lost a lot of the snow that was here, hopefully, it stays gone. I know I’m dreaming, but it’s good to have dreams. 😊

Ahhhh, so now you are cooking inside. We also had very spring like weather for most of last week. But winter is back...

Yes, it's nice to be able to cook inside again, especially with the temperatures dropping more and more, we're at -9 Celsius right now and its supposed to get colder throughout the day and the rest of the week. We are definitely back in winter here too. 😊
We will still have to use the barbecue for anything big, but the Instant Vortex Plus has been a huge blessing for us. It's the perfect size for two people. 😊
Eventually though, we'd like to get a propane/gas stove, like yours, to replace the one that hasn't worked properly since Christmas day 2021. 😊
